Almond Artichoke Summer Couscous
This Almond Artichoke Summer Couscous is an easy, light and healthy side dish or appetizer to go along with your meal. It's the perfect summer salad recipe!

- 10 oz box couscous
- 15 oz can artichoke hearts chopped
- 1 cup almonds slivered
- 1 cup sundried tomatoes
- 1 cup parmesan cheese shredded or grated
- 1/4 cup Italian dressing
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1 handful arugula leaves
Cook couscous according to package directions. Toss to fluff and chill until cooled.
Add rest of ingredients, stirring to combine. Serve or chill until ready to serve.
