Ingredients
4-5large Granny Smith Apples
11ouncebag Kraft melting caramelthe bits melt so quick if you can find them
10large marshmallows
2bags Ghirardelli White Melting Wafers
3/4cupgranulated sugar
1tablespoonground cinnamon
1 1/2cupsgraham cracker crumbs
Instructions
Remove stems from apples and push sticks into center of each apple. Leave enough stick exposed so you can easily hold the apple. Melt caramels according to package directions. Place a large sheet of parchment paper sprayed with cooking spray onto the counter next to the melted caramel. Take one apple at a time and dip and spoon caramel starting at the bottom of the apples, spooning 3/4 way up the apple. Remove any excess caramel and carefully place onto parchment paper to set up. Continue dipping with remaining apples. Cut bottom 1/4 of the marshmallows and place sticky side onto tops of the apples on both sides of the stick to form the Mickey Ears. I stuck a toothpick into each marshmallow/apple so they were secure when adding the white chocolate. I used a small hammer to tap the toothpick into the marshmallow FYI.
Once caramel has set up mostly, usually takes a good 15-20 minutes, melt the white chocolate in a double boiler. Boil water in a large saucepan, reduce heat to low and place a heat proof bowl over the hot water in saucepan. Add white melting wafers to bowl and stir until melted and smooth. Get a clean pice of parchment paper ready on the counter, to place dipped apples on. Place sugar and cinnamon into a shallow bowl, stirring to combine. Take the caramel apples and spoon the melted chocolate over entire surface of the apple including the marshmallow ears. Once covered, remove any excess chocolate before transferring to parchment paper. While chocolate is still wet, sprinkle top half with cinnamon sugar. Spinning apple to get the entire top half sprinkled. Quickly place apple into a bowl of graham cracker crumbs. Use a spoon to press crumbs up the bottom half of the apple. Continue to spin until crumbs are staying in place. Place onto clean sheet of parchment paper to let set up. When serving, remove stick, marshmallow ears and toothpicks. Cut into slices, removing the core portions on each slice. Serve on serving plate and enjoy!
Notes
If you have too much chocolate dripping from your apple, the crumbs and cinnamon sugar will start to fall down the apple. Try to remove as much excess chocolate as possible before sprinkling with toppings.
