  • Mason Jar with Lid To Prepare Salad Dressing

Ingredients

  • 15 oz can of drained chickpeas
  • 1 bunch fresh parsley, finely chopped
  • 2 heads fresh broccoli, shaved or chopped
  • 3 cups fresh English cucumber, chopped
  • 1 cup sliced kalamata olives, drained
  • 1/2 cup thinly sliced red onion
  • 2 cups baby tomatoes, sliced if preferred
  • 1 cup crumbled Feta Cheese
  • 2 cups grilled chicken, chopped
  • 1 fresh lemon, juiced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp Dijon Mustard
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper

Instructions

  • Place all of the vegetables and chicken into to a large salad bowl. Squeeze juice of one lemon over all ingredients.
  • To prepare dressing place olive oil, mustard, salt and pepper into a mason jar. Screw lid on and shake until well combined. Drizzled over salad and toss to combine.
