Feta Mandarin Asian Quinoa/Chipotle Lime White Bean and Corn Quinoa

¼cup"Feast from the East" Sesame Dressingfrom Costco (this is such a great dressing)
¼cupgreen onionschopped (the green parts)
½cupcrumbled feta cheese
½cupred bell pepperchopped
¼cupfresh chopped cilantro leaves
Chipotle Lime White Bean and Corn Quinoa:
1cupuncooked quinoa
3tablespoonsfresh lime juice
3tablespoonsextra virgin olive oil
¼teaspoonkosher salt
¼teaspoongarlic salt with parsley
1teaspoonadobe sauce(from can of chipotle peppers)
1can yellow corndrained
1can white beansdrained and rinsed
½cupfresh chopped cilantro leaveschopped
2chipotle pepperschopped
½cupred bell pepperchopped
¼cupgreen onionschopped (the green parts)
Instructions
Feta Mandarin Asian Quinoa:
Prepare quinoa according to package directions. Transfer to a large bowl. Mix in dressing, onions, feta, peppers and cilantro. Cover and chill until serving.
Chipotle Lime White Bean and Corn Quinoa:
Prepare quinoa according to package directions. In a small bowl whisk the lime juice, olive oil, salt, parsley and adobo sauce. Pour into quinoa and mix in corn, beans, cilantro, chipotle peppers, red bell pepper and green onions. Cover and chill until serving.
