Ingredients
2tablespoonsextra virgin olive oil
1tablespoonminced garlic
1poundground chicken
2tablespoonsRanch Dressing Seasoning Mix
2tablespoonsBuffalo Sauce
4slicesProvolone cheese
4Brioche Rollssplit
4tablespoonsprepared Ranch Dressing
1cuparugula leaves
Instructions
Heat oil in medium sized skillet. When hot add minced garlic and cook for 1 minute.
Add ground chicken to hot skillet. Season with Ranch Dressing Seasoning. Cook and stir until chicken is cooked through, no more pink.
Pour in buffalo sauce, stirring to combine.
Add provolone slices to top of ground chicken. Close with lid until melted. Stir cheese and chicken until combined.
Open rolls and spread Ranch Dressing on one side of rolls and a light layer of buffalo sauce on the other side.
Spoon cheesy buffalo chicken onto the bottom rolls. Top with arugula and close with top rolls. Serve Warm.

Notes
Find Good Rolls. I have found that the quality of your rolls make a big difference in the success of your sandwich. Look for a nice Brioche roll for this recipe.
Chicken Options. If you don't want to use ground chicken, cooked and shredded rotisserie chicken would work just fine too. Ground beef could be another alternative.
Double The Recipe. The cheesy chicken sloppy joe mixture is so good, I like to double to recipe to have leftovers to enjoy during the week.
