Ingredients

  • 1 stick salted butter softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 1/2 cups mini chocolate chips + 2 tablespoons

Instructions

  • Preheat oven to 350 degrees F. and spray a large loaf pan with cooking spray.
  • Place butter and sugar into a large mixing bowl. Mix until well combined. Add eggs and vanilla, beating until well combined. Stir in pumpkin puree until combined. Add flour, cinnamon, soda, salt and chips. Stir until combined. Transfer batter to loaf pan and top with a small handful of more mini chocolate chips. Bake for 55-60 minutes, or until bread is baked through. Check center with toothpick before removing. Let bread completely cool before transferring and cutting into slices.

Notes

  • Make sure loaf pan is well greased so bread doesn't stick when removing from loaf pan.
  • Use a plastic knife to loosen edges when bread comes out of oven. This will help when removing.
  • Wait until bread is completely cooled before removing from loaf pan.
