  • 1 box spice cake mix
  • 1 small box vanilla instant pudding mix
  • 4 eggs
  • 1/2 Cup oil
  • 1/2 Cup water
  • 1/2 Cup sour cream
  • 4 oz softened cream cheese
  • 1 teaspoon cinnamon


  • 2 cups prepared vanilla frosting such as Pillsbury
  • 4 oz softened cream cheese
  • 1/2 teaspoon cinnamon plus more to sprinkle on top


  • To prepare cupcakes, preheat oven to 350 degrees F. Place all ingredients into stand or electric mixer and beat on medium for close to 2 minutes, batter will be thick. Scoop or spoon batter into 24 lined muffin tins and bake for 18-21 minutes or until toothpick comes out clean from center.
  • To prepare frosting, mix frosting, cream cheese and cinnamon until well combined. Spread over cooled cupcakes. Sprinkle additional cinnamon lightly over frosted cupcakes.
