Ingredients
2large Hot House Cucumbersquartered and thinly sliced
2cupsdry pasta of choicecooked to al dente
15ouncecan garbanzo beansdrained
1cuppitted kalamata olives
1/2cupcrumbled Feta Cheese
1/4teaspoonkosher salt
1/4teaspoonLawry’s Garlic Salt
Creamy Feta Yogurt Dressing
Dressing
1cupPlain Greek Yogurt
2tablespoonsbuttermilk
1/2cupFeta Cheese
2tablespoonschopped shallots
1tablespoonextra virgin olive oil
1/4teaspoondried dill
1/4teaspoondried thyme
1/8teaspoonLawry’s Garlic Salt
1/4teaspoonfreshly ground black pepper
Instructions
Place cucumbers, cooked pasta, garbanzo beans, olives, Feta, salt and pepper into a large bowl. Stir to combine.
To prepare dressing, place yogurt, buttermilk, Feta, shallots, olive oil, dill, thyme, garlic salt and black pepper into a blender. Blend until smooth and combined. Pour over salad then stir to combine. Cover and refrigerate until ready to serve.
