Greek Pasta Salad
This Greek pasta salad is such a treat! The crunch of the cucumbers with the salty bites of kalamata olives are my favorite part of this salad along with the yogurt based feta dressing. Enjoy this crisp, zesty salad!

How To Make Greek Pasta Salad
- Place cucumbers, cooked pasta, garbanzo beans, olives, Feta, salt and pepper into a large bowl. Stir to combine.
- To prepare dressing, place yogurt, buttermilk, Feta, shallots, olive oil, dill, thyme, garlic salt and black pepper into a blender. Blend until smooth and combined. Pour over salad then stir to combine. Cover and refrigerate until ready to serve.
I used Fusilli whole wheat pasta from Delallo today.
You’ll need two hot house cucumbers. I quartered and thinly sliced them.
Place in a nice big mixing bowl and get ready to add the rest of the ingredients.
Oh how I love garbanzo beans/chick peas. Add those babies next.
Chop up some kalamata olives and stir in some Feta Cheese.
The dressing is a Greek yogurt and buttermilk based creamy dressing. There’s Feta Cheese, dill, thyme, garlic and more 🙂
How To Make Dressing For Pasta Salad
- To prepare dressing, place yogurt, buttermilk, Feta, shallots, olive oil, dill, thyme, garlic salt and black pepper into a blender. Blend until smooth and combined. Pour over salad then stir to combine. Cover and refrigerate until ready to serve.
Pour your dressing over, give a good stir and enjoy! It’s even better the second day after it’s marinated a bit.
Greek Style Cucumber Pasta Salad
Ingredients
- 2 large Hot House Cucumbers quartered and thinly sliced
- 2 cups dry pasta of choice cooked to al dente
- 15 ounce can garbanzo beans drained
- 1 cup pitted kalamata olives
- 1/2 cup crumbled Feta Cheese
- 1/4 teaspoon kosher salt
- 1/4 teaspoon Lawry’s Garlic Salt
- Creamy Feta Yogurt Dressing
- Dressing
- 1 cup Plain Greek Yogurt
- 2 tablespoons buttermilk
- 1/2 cup Feta Cheese
- 2 tablespoons chopped shallots
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon dried dill
- 1/4 teaspoon dried thyme
- 1/8 teaspoon Lawry’s Garlic Salt
- 1/4 teaspoon freshly ground black pepper
