These Peanut Butter and Chocolate Cookie Pies are the perfect sweet treat for any occasion! Inspired by one of my favorites at the Disneyland bakeries! So good!

Ingredients
1stick softened buttersalted
1/2cupgranulated sugar
1/2cupdark brown sugarpacked
1large egg
1teaspoonpure vanilla extract
1 1/4cupscreamy peanut butter
1 1/4cupsall-purpose flour
1/2teaspoonbaking soda
1/4teaspoonkosher salt
1cuppeanut butter chips
Homemade Chocolate Frosting
1stick softened buttersalted
3/4cupunsweetened cocoa powder
1/2cupmilk
1/2teaspoonpure vanilla extract
5-6cupspowdered sugar
Instructions
Preheat oven to 350 degrees F. and place 6 cookie pie liners onto a cookie sheet.
Place softened butter and sugars into a large mixing bowl, cream until well combined. Add egg and vanilla, stirring well. Stir in peanut butter until smooth. Add flour, baking soda and salt gently stirring until dough forms. Stir in chips until combined then scoop 3 large scoops of cookie dough into each cookie pie liner. Press dough down then bake for 15-17 minutes, until baked through. Let cool completely.
To prepare frosting place butter into a small saucepan over medium heat. Cook and stir until melted then add cocoa powder. Whisk until smooth. Remove from heat and transfer to a medium-large mixing bowl. Let chocolate cool for 10 minutes. When cooled slightly, add milk/vanilla and powdered sugar, alternating until all is used or frosting is to your desired consistency. Transfer to a piping bag or ziplock bag with tip of your choice added. Swirl chocolate frosting onto center of each cookie pie.
Notes
If you don't want to make homemade frosting, the chocolate frosting in a tub (Pillsbury) works just fine when time is short.
