Peanut Butter and Chocolate Cookie Pie
I knew the minute I tried this cookie pie from Disneyland’s Candy Palace that I needed a copycat recipe ASAP! My version is simple to make at home, check Amazon for these baking liners. Search Kategly Round Paper Mold and you should see them available.

What You’ll Need
- salted butter– For most of my recipes I use salted butter. Unsalted works too.
- granulated sugar- This fine white sugar adds sweetness to the cookie.
- dark brown sugar– Brown sugar has more molasses which makes it darker in color than light brown sugar.
- large egg– For consistency, I use large eggs in my cooking and baking.
- pure vanilla extract– For best tasting results use pure vanilla.
- creamy peanut butter– Uses your favorite brand of creamy peanut butter.
- all-purpose flour– Flour is the main dry ingredient in the cookie pies.
- baking soda– Baking soda helps the cookies rise during baking.
- kosher salt– Kosher salt is a course salt commonly used in cooking and baking. I prefer it over table salt.
- peanut butter chips (can be made without)- Find peanut butter chips near the other chocolate chips.
- unsweetened cocoa powder-Unsweetened cocoa powder is found down the baking isle of the grocery store. Make sure package says unsweetened.
- milk– 2% works great.
- powdered sugar– Also called confectioners sugar, this sugar is used to make the chocolate frosting.
How To Make Peanut Butter Cookie Pie
- Preheat oven to 350 degrees F. and place 6 cookie pie liners onto a cookie sheet.
- Place softened butter and sugars into a large mixing bowl, cream until well combined. Add egg and vanilla, stirring well. Stir in peanut butter until smooth. Add flour, baking soda and salt gently stirring until dough forms. Stir in chips until combined then scoop 3 large scoops of cookie dough into each cookie pie liner. Press dough down then bake for 15-17 minutes, until baked through. Let cool completely.
- To prepare frosting place butter into a small saucepan over medium heat. Cook and stir until melted then add cocoa powder. Whisk until smooth. Remove from heat and transfer to a medium-large mixing bowl. Let chocolate cool for 10 minutes.
- When cooled slightly, add milk/vanilla and powdered sugar, alternating until all is used or frosting is to your desired consitency. Transfer to a piping bag or ziplock bag with tip of your choice added. Swirl chocolate frosting onto center of each cookie pie.
Place three large scoops of cookie dough into each paper liner then press down slightly. Bake for 15-17 minutes, until baked through. Let cool completely.
If you don’t have a piping bag, you can use a Ziplock bag, snip the corner and press a piping tip into the cut corner. Make sure it’s tight so the frosting doesn’t come out the sides. Also note, you can use prepared frosting you get at the grocery store if you don’t want to make homemade.
Pipe chocolate frosting onto the center of each cooled cookie pie.
How To Serve
Serve cookie pies room temperature or even better warmed up. Use a spoon to enjoy or remove paper lining and even cut into wedges to share.
How To Store Leftovers
Store any leftover cookies in an airtight container for up to 3 days.

Homemade Chocolate Frosting
