I’ve got a delicious crock pot dinner for you today! My Slow Cooker Creamy Chipotle Chicken Tortellini is great for Sunday dinner or even weeknights. You’ll need a handful of basic pantry ingredients, to get started. Let’s take a look at how to put together the recipe.

What You’ll Need

Here are the ingredients you’ll need to make our chicken tortellini recipe at home. See the recipe card located at the bottom of the post for full details.

There are a couple of options for cooking your chicken. You can slow cook them like I have pictured here for 3-4 hours on high. Or you can bake them at 350 loosely covered with foil for about 50-60 minutes. Once the chicken is cooked, shred it into bite size pieces.

How To Make Slow Cooker Chicken Tortellini

  1. Heat crock pot to high setting. Place 1 cup chicken broth into crock pot over chicken breasts. Cook for 3-4 hours until easy to shred with a fork. Discard broth and shred chicken into bite size pieces.
  2. Pour 32 ounces of chicken broth into crock pot. Place cream cheese, broccoli, tortellini, shredded chicken, chipotle sauce, cumin, salt and pepper into crock pot. Close lid and cook on high for 2 hours. Stir gently to combine cream cheese. Serve in bowl. Top with pepper.

After your chicken is cooked, remove it from the crock pot. Add your chicken broth and cream cheese.

Broccoli goes in the crock pot next.

Add your tortellini straight to the crock pot.

Shredded chicken to the crock pot next.

Add your cumin, chipotle sauce, salt and pepper. Cook on high for 2 hours.

How To Serve

Serve chicken tortellini hot in individual serving bowls. Top with your favorite hot sauce and even some shredded cheese if you’d like. It’s great served as is too.

Leftovers

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat as needed.

  • 1 cup reduced sodium chicken broth
  • 3 medium chicken breasts
  • 32 ounces reduced sodium chicken broth
  • 8 ounces cream cheese, full fat preferred softened
  • 1 pound tortellini dry or fresh
  • 8 cups broccoli florets
  • 4 tablespoons chipotle sauce If the can has whole chipotle peppers, use the sauce from it
  • 2 teaspoons ground cumin
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
