Sharing our favorite butterscotch cookies today! My One Bowl Butterscotch Chocolate Chunk Cookies are perfectly crisp around the edges and soft in the center with chocolate chunks and butterscotch! A family favorite cookie recipe.
Butterscotch Cookies
Sometimes it’s nice to whip up a batch of cookies all in one bowl, minimal clean up and cookies in the oven pronto. These buttery crisp cookies are hard to eat just one, you are warned. The edges are crisp and the center is chewy. They are somewhat flat and absolutely oozing with chocolate chunks and butterscotch chips. Hope you enjoy!

How To Make Butterscotch Cookies
- Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
- Place butter and sugars into a large bowl, mix until well combined, about 2 minutes. Add egg and vanilla, mixing until well combined.
- Add flour, baking soda and salt to bowl, mix 3 or 4 times then add butterscotch and chocolate chunks, mixing until just combined. With a medium cookie scoop, scoop dough onto prepared cookie sheet, placing 1 inch apart.
- Bake for 13-15 minutes or until nice and golden brown but still semi-soft in center. Remove and let cool on baking sheet for 5 minutes before transferring to cooling rack. Serve and enjoy!
Mix, mix, mix until nice and combined.
Add an egg and vanilla then give a good mix.
Add your dry ingredients.
Stir half way then add your chips.
Add those chips and chocolate chunks baby!!
Oh yah, give it a taste. The dough is incredible.
Ready for the oven.
Bake until nice and golden. Love!!

Ingredients
- 1 stick/8 tablespoons unsalted softened butter
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup plus 2 tablespoons all purpose Gold Medal Flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup butterscotch chips
- 1 cup chocolate chunks

I tried this recipe and I love the buttery flavor! I used non dairy butter, coconut sugar and toffee instead of butterscotch. 1/4 cup of flax and 3/4 & 2 tbsp whole wheat flour. They came out flat and bubbly at 13 min. So with the remainder I added 4 tablespoons more flour (1/4cup), and 1/4 tsp baking powder. They came out like the photos. (I’m using high altitude flour and live at 4,400 feet above sea level). Love this recipe, found on Yummly!

My mouth is watering! Love the easy clean-up. I have a bad reputation of using every dish in the kitchen when I’m baking and cooking. Even though my guy usually is happy to do all those dishes (especially when chocolate chip cookies are involved), somehow I think he’ll appreciate this one!

Jenny I love that you made these in one little bowl without a mixer! Sometimes I don’t make cookies b/c it can be a production with creaming ingredients, chilling dough, cleaning out the mixer, etc. These are perfect for those times when you just want cookies, pronto 🙂
Jenny, I don’t write comments very often but this Butterscotch Chocolate Chunk cookie is to die for!!! I am making them right this minute. The recipe is so easy, they come out beautifully and they taste amazing!!! I also have made your huge M & M Chocolate Chip cookies with the muffin top pan……and that was a huge mistake as I ended up eating almost all of them…they were so good!!!
