I added 2 Tablespoons of vanilla pudding mix, but have made the donuts without. I like the flavor and texture it brings, but if you don’t have it you can make without.

    They look amazing.

I just bought a donut pan (wilton!) last week but haven’t broken it in yet. I need to with your recipe. Amazing, Jenny. I am pinning it to my Donut Board right now, too.

Ice cream, pumpkin, a great glaze, vanilla infused, super moist looking…and beautiful pics (love the plate you used to go with them..perfect)…you are my hero with these ๐Ÿ™‚

  2. Ah! I just ate breakfast, but now I want donuts – and not just any donuts, I want these ๐Ÿ™‚ I was really curious to see how you incorporated ice cream. I’m sure it makes them that much yummier! And I love anything pumpkin flavored, so I’ll definitely have to try this recipe as soon as I get my hands on a donut pan!

  3. Shona Parker

Those look fabulous – and I don’t think that is just the pregnancy cravings talking! I am so going to have to make those. Been wanting a donut pan and now I think I have a good excuse!

  7. Diana P

Can I use frozen yogurt instead of ice cream? Or are there any exchanges I can use to make it a tad bit healthier?

  8. this sounds fabulous! I’d like to try it. Being lactose intolerant I’m unable to use the vanilla pudding mix. By using lactose free alternatives I can substitute the ice cream & heavy cream. As for the Vanilla Pudding mix I found one resource that says to substitute: 3/4 C powdered sugar, 2 tsp. vanilla, 1/2 tsp nutmeg and an egg yolk for the vanilla pudding mix. Then take needed 2 Tbsp needed from that. I hope it works!

    1. Hi Stephanie,
The pudding mix I put in is actually dry. It sounds like the recipe you are talking about is for the actual finished pudding. You can substitute the ice cream for a lactose appropriate milk and just leave out the pudding mix. Hope this helps!!

      1. thanks for the info! I used fresh pumpkin and dyed my batter orange, I ended up leaving out the vanilla pudding mix and I used a mini donut pan. They turned out really yummers! The miniature donuts are ridiculously cute! If anyone is wondering I baked them for 15 min and got 60 mini donuts!

  9. Dana B

Love the appearance of the texture! I’m not usually as in to cake style donuts, but I keep wanting to reach into the screen to get it! ๐Ÿ™‚

Believe it or not I literally just finished making some vanilla and red velvet baked donuts for my child care children for when they get home from school for their afternoon snack. They will get to frost them and decorate them with halloween decorations. Yummy, I can hardly wait myself. Keep the recipe’s coming. ThAnKs!! ๐Ÿ™‚

I love pumpkin and these donuts look amazing. I did even know donuts pans were in stores. I would love to win one and start making donuts without the grease. Thank you.

  12. Rachel

Ooh. I can’t wait to try these. I love donuts and these look delicious. I love the ice cream idea. I’ve tried two other baked donut recipes and wasn’t impressed by either, but these look like a sure win.

Would really love to win a Wilton pan because that would just be the icing on top of the….err, donut.

    Thanks!

  23. Tara

I made these tonight, and they were good, but I’m wondering if I did something wrong, cause they have a slight tart taste to them. Is that how they’re supposed to be?

  24. Tammy P.

These look Yummy!!! I have looked in all of the stores in my area for a donut pan, no luck.Has anybody tried making this recipe in a muffin pan? I think i am going to try it because it looks soooooo good!!! Any suggestions on what stores carry donut pans?

  25. Melissa

These look so tasty! I had to try them today but they taste bitter like I put too much baking powder in them, does it really call for 1 TBSP of powder? Something is off…

    1. Hi Melissa,
I wonder what happened? I’ve made them a dozen times already and don’t taste the bitter. You are using baking powder right? I wonder if different brands of baking powder make a difference? Weird.

  26. DELICIOUS!! I recently bought a doughnut baking tray, I think this may very well be the first doughnuts I bake :). I love that you added the ice cream, I made ice cream bread before using and the consistency is to die for.

  27. Christine

These are by far my favorite baked donuts, and no other recipe comes close to comparing. My issue is- what do I do when I want a great donut that isn’t pumpkin? Can I omit it? I feel like leaving it out will do something to the texture and ruin what i love about these donuts. Please help!!
