Barbeque Ranch Chicken Pizzas (picture coming soon)
4 Bays English Muffins, split and lightly toasted
2 cups precooked chopped chunk chicken
1 cup barbeque sauce (divided)
1/2 cup diced red onion
1/2 cup prepared ranch dressing
1/2 cup shredded mozzarella cheese
1/2 cup chopped fresh cilantro leaves
Preheat oven to 400°F. In a medium bowl, combine the chicken with ½ cup of the barbeque sauce; mix until combined and set aside. Place the lightly toasted muffins on an ungreased baking sheet. Spread the remaining barbeque sauce over each muffin. Spoon chicken mixture then red onions over sauce. Drizzle ranch dressing over chicken then top with mozzarella cheese. Bake for 10 minutes or until muffin edges start to turn golden brown and cheese is hot and bubbly. Remove from oven and top with cilantro leaves.
Serves 4-6

Thank you for the clarification Jenny! I feel confident enough that I am willing to give it a shot in the weeks ahead…a giant step for somebody like myself who tinkers in the kitchen once a month and usually with undesirable results.

I just realized that the Bays website has a misprint on my recipe and that’s where I copied and pasted it from instead of my original.
It really is an easy recipe, let me clarify…
The chicken should NOT be divided. Mix the BBQ sauce with all of the chicken. You don’t mix the red onions in the BBQ sauce.
Let me know if this does not make sense.

I am certain your recipe is fine and the fact that I can’t cook is the only thing standing in my way, but you lost me on the first turn!
You use the word “divided,” so I assume portions of the amount are used more than one time. However, I become confused with the chicken.
You start with, “combine the chicken with 1/2 cup of barbecue sauce.”
How much of the [divided] chicken should I be mixing?
Suddenly I am to, “spoon the chicken mixture and red onions over sauce.” Is this the same chicken I mixed with the barbecue sauce?
Should I have put the red onions in it too or is this the part of the [divided] chicken I did not use?
Sorry for the silly questions but keep in mind, cooking does not come easy for everybody. I think I’d have a better shot at success piloting the space shuttle!
