I fully admit that most of my desserts, I just sample then happily share with family and friends. This one, well, I couldn’t stop! There’s something about a warm dessert with ice cream melting on top that is just hard to resist.

What You’ll Need To Make Peach Cobbler Recipe
Let’s take a look at the ingredients you’ll need to make this cobbler recipe. See bottom of post’s recipe card for full instructions.
- All-Purpose Flour– Flour is the main dry ingredient for the cobbler.
- Granulated Sugar– This fine sugar brings the sweet to the cobbler.
- Kosher Salt– This coarse salt is commonly used in cooking and baking. Find it near the table salt.
- Butter– For most of my recipes I use salted butter, but unsalted is just fine here too.
- Ice Cold Water– ice cold water is used to make the homemade pie crust.
- Fresh Blueberries– wash and gently dry fresh blueberries.
- Fresh Peaches– Peel and slice fresh peaches for cobbler filling.
- Corn Starch– Corn starch helps thicken the fruit filling.
- Lemon Juice– Just a squeeze of lemon juice adds the perfect freshness to the fruit filling.
- Ground Cinnamon– Cinnamon adds the perfect spice.
- Vanilla Ice Cream– Use your favorite good quality vanilla ice cream for the top of your cobbler.
How To Make Easy Peach Cobbler
Preheat oven to 350 degrees F. and lightly spray an 8 x 11 inch baking dish with non stick cooking spray.
Prepare the crust. Add the flour, sugar, and salt to a food processor. Pulse to combine. Add the butter and pulse until the mister is the size of small peas. With the food processor running, slowly add the ice water until combined. Transfer the dough to a lightly floured countertop, kneading a couple times to combine. Divide the dough in half, flatten slightly, and wrap tightly with plastic wrap. Stick in the freezer for 15 minutes while working on the peach blueberry filling.
Fruit cobbler filling. Place the blueberries and peaches into a large mixing bowl. Stir in sugar, corn starch and lemon juice until combined.
Roll pie crust into a rectangle big enough to fit inside and on top of baking dish. Press first rolled dough into baking dish.
Pour Filling Into Baking Dish. Pour peach blueberry filling inside dough.
Top With Second Rolled Pie Crust. Top with second rolled dough, cutting small shapes if desired. I used a tiny heart cookie cutter.
Brush top of dough with melted butter and top with mixed cinnamon and sugar.
Bake for 50-60 minutes, until dough is golden and cooked through. Serve in individual bowls and top with vanilla ice cream.
How To Serve Cobbler
Serve cobbler warm with a nice scoop of vanilla ice cream on top. Homemade cobbler is great for Sunday dinners, holidays, summertime, and really anytime you want a delicious dessert for the family.
How To Store Leftovers
Store any leftover cobbler in an airtight container in the refrigerator for up to 3 days. Re-heat as needed. Place cobbler in a heat proof bowl, cover and microwave for 60 second intervals until hot.
Can You Freeze Cobbler?
Yes, store cobbler without ice cream added in an airtight container in the freezer for up to 3 months. Thaw completely before serving.
