    I love caprese salad using tomatoes and basil from the garden. I usually add cucumbers too… which changes the validity of caprese, but is still yummy w/ mozz and balsamic!

    You take 2 graham crackers, put pb on each side and then a big spoonful of Cool Whip. Put in the freezer and they come out like ice cream sandwiches!!!

    When we have an abundance of tomatoes,I peel and quarter them and then pour light italian dressing over them and chill and eat,I just keep adding more tomatoes as we empty the bowl,makes for a great light meal or snack,very yummy

    My favorite light summer treat is probably berry trifle. I use FF cool whip and a little cream cheese for the creamy filling, along with angel food cake (sometimes soaked in creme de cassis), and lots of fresh berries. Yum!

  16. Salads!! My favorite is mixed greens with a slice or two of turkey bacon, chicken breast, cranraisins, a couple of glazed peacans topped off with a light balsmic dressing.

    A light treat I enjoy in the summer would have to be a wonderfully fresh caprese salad. Soft mozzarella, juicy tomatoes, and basil straight from the plant… perfection!

    My kids and I have been loving frozen grapes this summer. But we’ve also been eating up tons of different kinds of homemade popsicles. Kids have been liking those way better than “normal” desserts!

    Do strawberries dipped in dark chocolate count as a “light” treat? But of course I love eating any and all berries in the summer!

  26. A light treat I enjoy a bed of romaine lettuce with a scoop of homemade chicken salad and some avacado. That’s it. I don’t love salad dressing, I mostly think it is gloopy and gross, but the little bit of mayo in the chicken salad is just enough to satisfy each bite. Yum!

    grahamwiches. Instead of icecream sandwiches, I put whipped topping in between graham cracker and freeze them. They are fabulous!

    My fav light treat that I eat all summer long is nice, cold raspberries. Love them. Sometimes I drizzle a little dark chocolate on a bowl full and go at them with a fork. So yummy!

  40. We love to marinate boneless chicken breasts in a lemon marinade and then grill to place on top of a nice summer salad. So juicy and so yummy!

    I’ve been wanting a grill pan, so this would be even better! My favorite “light” summer treat is probably just fresh watermelon. My grandparents always had some in their garden, so we’d get it and cut it straight from the vine. So delicious.

    I don’t know how to BBQ. We have a charcole pit…so, my husband usually deals with the fire. Would be nice to have this to grill in the house.

We like to grill chicken breasts marinated in Italian dressing, with skewers of pineapple, peppers, shrimp & seasonal veggies (squash, eggplant, zucchini…you name it! even tomatoes are good grilled! peppers too!) and corn on the grill is SO yummy! You just pull the shucks down, peel the corn, slather it with light butter spray or something similar, then wrap the shucks back around it, and stick it on the side of the grill. Mmmm!!

    Mango salsa. You can use it on fish, chicken, or just with chips. I guess the chips counteract the healthy part, though. ๐Ÿ˜‰

    Actually right now I am enjoying a summer salad filled with great fresh fruit, strawberries, kiwi, grapes, oranges, and blueberries. Add with some raspberry vinagerette dressing and I am good to go!

    I cut up 1/2 a banana and about 5-6 strawberries and top them with whipped cream!! Reddi Whips fat free version only has 5 calories for 2 tbsp!! Delicious and satisfying!

    Take a baguette roll and slice (I prefer whole wheat). Mix 8 ozs of cream cheese with a packet of the dry ranch dressing mix. Spreaad mixture with cream cheese/ranch spread. Top with a slice of cucumber and a sprinkle of dill.

    Hi, for my light treat I like to get graham crackers, spread light Cool Whip on them and top with another graham cracker and freeze. I keep them in an air tight container or aluminum foil to enjoy like a guilt free ice cream sandwich. YUMMY!!! By the way looking at all these suggestions are giving GREAT ideas & making me a little hungry. ๐Ÿ™‚
