  1. Banana Soft Serve Ice Cream. Mmmmm. It is light and you can add anything to it to spice things up – melted chocolate and nut butter combo is my favourite.

    I love ripe fruit during the summer. They are so juicy! I’ve started a new eating habit where I eat my fruit with some greek yogurt. It’s quite delicious! ๐Ÿ™‚

  3. summer is salad season in our house, and my current favorite is baby spinach with a light raspberry vinaigrette, slivered almonds, raspberries and blueberries ๐Ÿ™‚

  4. I don’t know how “light” it is – but “summer” to me means grilled peanut butter and jelly. Make your PB&J like normal (only I add extra PB!), then grill like a grilled cheese. I rarely make one in the fall or winter, for some reason it was always “summer” food! I also love kabobs – love love love! Especially because as the chef, I get to pick my favorite veggies and can skip the ones I am not a fan of. ๐Ÿ˜‰

    I love to just sit down with a big bowl of frozen fruit. Walmart sells a bag of mixed frozen fruit with strawberries, peaches, mango, and pineapple. Its a cool snack when its 100+ degrees outside!

    One of my very favorite light treat that I enjoy all the time, but ESPECIALLY in the summer, is grilled pineapple! Usually I do it in my skillet but this would be the perfect thing for me!

  16. I’m sure it’s been said, and said, and SAID but my fav light and cool meal in the summer would be a salad. Especially fresh picked from the garden! I did not get as much lettuce from my garden this year as I would have liked, but the tomatoes are coming on and they are divine! They deserve to be eaten with cucumbers in a salad. ๐Ÿ™‚

    This year is the year of the wrap in our house. We pack lunch to take to the pool and I wrap 3 slices of turkey, one slice of 2% Cheddar Cheese, and avocado slices in a whole wheat tortilla….YUM!!

    We grill romaine lettuce. Brushed with some olive oil, salt & pepper. And then top it with some blue cheese and reduced balsamic vinegar.

    Frozen bananas is by far my favorite light summer treat. Put frozen pieces in a blender, and you have an “ice cream” like banana treat, but with way less calories and sugar! Yum!

    For one of our light meals, we catch our own Coho from Lake Michigan and I cook it on our grill with olive oil, honey and soy sauce! Delicious and fresh!

    There is nothing like a fruit salad, full of different berries, citrus and other exoctic fruits. Grill a piece of pound cake, fruit compote on top and voila- dessert is served.

    Our grill blew away during a storm and we haven’t been able to replace it yet. My wife likes salads for summer. My idea of a salad is a wedge of Iceberg lettuce with dressing poured over it, standing at the sink while you eat it.

    Fruit salad…I make it up and freeze it. Pull it out 30 minutes before I want to serve it and it is ice cold and a great treat that everyone enjoys!

    I love toasted wheat bread spread with a little Alouette cheese and topped with sliced homegrown tomatoes and a bit of basil, sea salt and fresh cracked black pepper! Great light meal or snack!

    I love to eat banana “ice cream”. Take frozen banana, a dash of milk, add some peanut butter and chocolate chips and blend it in the blender until mixed together…soo good…of course the chocolate chips and peanut butter can be omitted to make it “lighter”.

  51. i have got a massive bush of basil growing in my backyard right now and i just can’t use it fast enough. my favirite “light” treat this summer is anything with fresh basil in it….particularly, homegrown tomatoes sliced up with a blall of local fresh mozzarella and a drizzle of olive oil and balsamic. i’m drooling.

    I like to freeze green grapes and then when it is hot I will have these as a treat. They are cold and there is a sweetness to them and they are not too caloric.

    And then lastly, my favorite light summer dish is pretty much anything from the grill: meat and veggies. About 50% of my summer cooking is done on the grill, usually marinated chicken breast for the weeknights because it’s quick and a little more expansive on the weekends with steaks, grilled veggies and potatoes.     I love summer fruits, they are a light treat for me!! But when I want something more dessert like, I go for fresh strawberries dipped in light sour cream and sprinkled with brown sugar. Making each one pretty and taking my time to savor them means I can enjoy just a few but feel like it was a big dessert. ๐Ÿ™‚
