Activate Yeast. Place warm water, yeast and sugar into bowl of a stand mixer with dough hook attatchment. Mix gently then let sit until doubled in size, about 5 minutes.
Flour, Olive Oil and Garlic Salt. With mixer on low, add flour, olive oil, salt and garlic salt. Scrape sides of bowl and let mixer knead dough for 5 minutes. Dough should have the sides of the bowl cleaned.
Continue Kneading. Add sprinkles of flour or water if needed to get the bowl cleaned while kneading.
Remove Dough. After 5 minutes of kneading, remove dough from mixing bowl with floured hands (put a small amount of flour in your hands and rub together), and transfer to a floured countertop. Fold dough over itself a couple times then form into a round ball.
Prepare Small Pizzas For Ears of Mickey. When ready, remove about 1/2 cup of dough for each “Ear” pizzas.
Prepare Larger Pizza. Place largest piece dough onto the first pizza pan, pressing to a 10 inch round. Place the smaller pieces of dough onto a second pizza pan, pressing to 4 inches round. Spoon pizza sauce over dough leaving a 1 inch border around edges.
