Sharing one of my favorite pasta recipes today! My Parmesan BLT Whole Wheat Pasta makes a great weeknight dinner with everyone’s favorite….BACON!

Pasta recipes are some of my very favorites to create! I developed a super simple whole wheat pasta dish that is packed with my family’s favorite ingredients. I took everyone’s favorite BLT and made it into a fun pasta….used spinach for the “L” You could also use arugula or kale. All you need is about 30 minutes for this dinner, hope you enjoy!

Whole Wheat Pasta
Have you roasted cherry tomatoes before?! They are so delicious by themselves and even better in pasta. You are in for a treat.
Cook your pasta, drain it then transfer it to a hot skillet with some olive oil at the bottom.
A little salt and pepper.
BLT Recipe
Bacon. Lots and lots of bacon!
Some beautiful spinach leaves, thinly sliced.
Parmesan Cheese up next.

Parmesan BLT Whole Wheat Pasta
Ingredients
- 4 cups cherry or grape tomatoes
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 pound whole wheat fettucini or spaghetti noodles
- 3 tablespoons extra virgin olive oil
- 1 pound bacon cooked and crumbled (I used ready made bacon that just needs microwaved)
- 4 cups thinly sliced baby spinach leaves
- 1 cup shredded parmesan cheese
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Place cherry tomatoes onto a large baking sheet lined with a silpat liner or parchment paper. Drizzle with olive oil and sprinkle with salt and pepper. Bake at 375 for 10-12 minutes, until tomatoes collapse. Remove and set aside.
- Cook pasta according to package directions. Drain. Place oil into large rimmed skillet over medium heat. Toss in cooked pasta then stir in bacon crumbles, baby spinach, parmesan cheese, salt and pepper. Toss gently and cook until heated through. Gently toss in roasted tomatoes. Add additional olive oil as desired. Serve warm.

Well, my wife and I have a deal. She does all the cooking. I now do most of the grocery shopping to take that off her plate. As a teacher, I was home with the kids for Christmas break and now realize how hard her job is a a SAHM! It’s tougher than I thought. I was actually happy to go back to work today. I’m still going to ask her to make this because it looks so good, but I’ll bring the groceries home for her.

I’m always looking for simple (and delicious!) new dinner recipes to try, and this one looks fantastic! Roasting the cherry tomatoes sounds like a really simple way to amp up the flavors a little bit, I will definitely have to try this out for dinner soon. Pinned!
