How To Make Buttermilk Pancakes

  1. Place flour, baking soda, salt, sugar, buttermilk, egg and vanilla into a large mixing bowl. Stir until combined. Finely chop fresh strawberries then take a fork and mash until nicely mashed. Add mashed strawberries to bowl and stir to combine. I added a drop of red food coloring to enhance the pink, but it is completely optional. Spoon a couple tablespoons of batter into a non-stick skillet over medium heat. With spoon, form a round pancake. Let cook until batter starts to bubble, takes about 1-2 minutes. Flip and cook until browned, about 1-2 additional minutes. Transfer to plate. Continue until all pancake batter is used. Keep pancakes warm.

Tips For Making The Best Pancakes

  1. Mix lightly and give batter a rest!  Mix pancakes minimally to avoid forming toughening gluten. There are a few ways to ensure that you mix pancake batter well without overmixing it. Have all your ingredients at room temperature. Mix cold buttermilk and eggs with melted butter and you get clumps of butter—not the end of the world, but not optimal for even distribution.
  2. Mix the wet and the dry ingredients separately before combining.
  3. Give the batter a rest before cooking. A rest of at least five minutes allows for the even hydration of the batter and also allows the gluten you created—which will develop even with careful, minimal mixing—to relax. The lumps will smooth out somewhat during this rest.
  4. Test a small pancake in the hot skillet/griddle to make sure temperature is good.  No need to waste a full size pancake.
  5. Cook until bubbles cover the surface; flip before they all break.

I’m thinking I don’t even want to know the calorie count on these babies! Will be the perfect valentine’s day breakfast for my son. I’ve been making him a special v-tine’s day breakfast ever since he was just a little guy. I’ll be adding some mini chocolate chips to the pancakes. Thanks for the idea!

I made these pancakes this morning for my son’s Valentine’s breakfast that I prepare for him every year – even on a school morning we do a special breakfast. They were decadent! Defintely rich! The syrup sounded a little much with 1 stick of butter so I used 1/2 stick and it was plenty! Added some mini chocolate chips to the pancake batter. My son loved them and said they were chocolatey! Thanks for the great idea and new recipe! I cut out a small heart shaped piece of butter to top it off – very festive!

Made these today. Let me just say as a family that eats pancakes or French toast every weekend, and who has a hubby who only likes “plain & nothing fancy”. These were a huge hit in my house. Even my teenager who doesn’t like nutella (switched at birth, I think!) Loved these. Hubby said I could make these every weekend from now on. My picky 7 yr. old who doesn’t like pancakes and asked for thirds with these. Huge hit in my house! Thanks!

These were very good! I used some leftover strawberry purΓ©e instead of the chopped strawberries, so I’m not sure if that’s why the strawberry flavor seemed to get lost. But I’m not complaining, because that syrup is amazing!!! I could drink it from a glass and be in heaven!
