My favorite spaghetti is with roasted tomatoes, garlic, olive oil and red pepper flakes. It’s basically the topping for bruschetta, but mixed in with spaghetti instead of on top of bread. Yum!

Another spaghetti recipe I make: Zucchini Spaghetti

    9 oz linguine or spaghetti
4 cup shredded zucchini (about 3 medium, I sometimes use yellow squash)
    4 tsp olive oil
2 garlic cloves, thinly sliced (I like garlic so I use 5)
1/4 cup fat-free plain yogurt or sour cream (we prefer sour cream)
3/4 cup reduced-fat shredded cheddar cheese
    3/4 tsp salt
    1/4 tsp pepper

    1. Cook linguine according to directions. IN a sieve or colander drain the zucchini, squeezing to remove excess liquid. I also put the zucchini in a cheesecloth and wring it out to remove all of the liquid.
    2. In large nonstick skillet, sautee zucchini in oil for 2 min, add garlic, sautee 1-2 min longer or until zucchini is tender. Transfer to a large bowl. Add the yogurt(sour cream), cheese, salt and papper. Drain pasta; add to zucchini mix and toss to coat.

I like to make a marina sauce from Italian style crushed tomatoes and tomato sauce with crushed garlic and sauteed onions and hamburger.

One of my favorites is Putanesca, and it’s so easy – sauteed garlic and anchovies, capers, olives and tomatoes. Quick and delicious – all from the pantry!

I love to make a simple broccoli, grilled chicken, garlic & cherry tomatoe on whole wheat spaghetti with olive oil, pasta cooking water and parmesean cheese. No recipe needed. ๐Ÿ™‚

  6. Becky

In the summer I love to cut up fresh garden tomatoes, basil, olive oil, garlic and salt then leave it in a bowl to macerate for 30 minutes or longer then pour over my hot spaghetti or angel hair pasta. Sprinkle on a few red pepper flakes for added zing! Quick and easy!

  7. Karen D

I love to take spaghetti and drizzle olive oil on and stir in garlic powder, chili powder, paprika, and parmesean cheese, and eat warm, yum yum

  8. Dee Parker

As long as spaghetti isn’t covered in a cream sauce it’s pretty healthy. I like to make a simple sauce with garlic, plum tomatoes, capers, olives, and olive oil just cooked enough to warm everything up. Yum!

  9. Barbara

I like pasta with a simple sauce of olive oil and garlic but this addition of thyme sounds intriguing. I will definitely try this next.

I love using a can of pumpkin in with some veggie sausage and a few vegetables (onion, zucchini, tomatoes) and then baking it slightly for a little cheese to melt. One of the easiest & tastiest spaghetti dishes.

Oh, my goodness this looks awesome and just might become a new favorite. We love whole wheat spaghetti with loads of roasted veggies added to it, topped with just a dusting of fresh grated parmesan.

  12. Another one of my favorite healthy spaghettis is simple: whole-wheat or whole-grain spaghetti with roma tomatoes, garlic, fresh basil, olive oil & parmesan (or fresh mozzarella as a treat). Yum!!! ๐Ÿ™‚

  13. My last favorite way to eat pasta is, well… plain!! I honestly have a place in my heart for plain noodles, without any toppings. I used to eat it like this ALL the time as a picky eater child… so I still love it! Whole-wheat or whole-grain pasta adds the perfect nuttiness to this method.

  14. Dee Parker

I make a veggie spaghetti, too. But I don’t like the taste of chunks of zucchini and yellow squash, so I grate them and carrots and saute them with in olive oil with garlic and herbs.

  15. yum! This looks delicious. I like some wheat pasta with a bit of olive oil, garlic, and thyme. Then I’ll usually add some tuna from protein, and serve it with a side salad of arugula. Thanks for the giveaway ๐Ÿ™‚
