Hi everyone! The nice folks at Challenge Butter who sent me the coupons for the Facebook Giveaway sent me a lovely package of Nordicware Bakeware last week.

I baked a carrot banana bread last weekend but it totally didn’t cook right in the middle so I had to overcook it and it was a mess. I could see and taste the potential so I will for sure try it again. I just need to use a different size pan.

I baked brownies…YUM!!
The last thing I baked was a “Morning Glory Coffeecake” with freshly grated carrots and fresh pineapple, iced with fluffly cream cheese frosting! Yum! The day before I baked Recipe Girl’s Lemon Truffle Cake – which turned out to be a lemon truffle trifle! Long story, disaster turned into trifle!
The last thing I baked was a simple banana bread….my son stopped eating bananas (he goes through phases( and I needed to use some that were too ripe to eat.
