Break out your Large Muffin pan folks, we are making Egg McMuffin Cups today! I love this recipe, it’s almost too easy and too cute!

Who needs McDonalds when you can make your own delicious 4 ingredient Egg McMuffin yourself?! These are a blast to put together and look so cute on a plate. My kids loved this little breakfast in a cup.

I LOVE drizzling some good hot sauce over mine, definitely give it a try if you like things spicy 🙂  Have a beautiful Thursday, see you all soon!

Assembling the Bacon, Egg and Cheese on the English Muffins

Here’s the lowdown….press your english muffin inside Texas Size Muffin cups, line inside with bacon, sprinkle inside with cheese, break an egg inside, season with salt and pepper, bake and woo hoo you are done!! Mmmm!

Bacon and Cheese Egg McMuffin Cups

These Bacon and Cheese Egg McMuffin Cups will change your life! They're prefect for busy mornings and a million times better than fast food.

Equipment

  • Oven

Ingredients

  • 3 whole english muffins split
  • 6 slices ready cooked bacon
  • 1/2 cup shredded cheddar cheese
  • 6 large eggs
  • pinch kosher salt & cracked black pepper

Instructions

  • Preheat oven to 350 degrees F. Press english muffins carefully into bottom of a 6 cup Texas size muffin tin.
  • Form a little circle with the bacon and place around inside of muffin. Sprinkle inside with cheese then top with a whole egg in each cup, keeping inside the bacon ring. Sprinkle with pinches of kosher salt and pepper.
  • Bake for 15-20 minutes or until egg is cooked through, not jiggly 🙂
  • Remove and let cool for 5 minutes before removing from muffin tin. Serve as is or with some of your favorite hot sauce and a side of fruit!

    Looks delicious! I have never heard of “ready-cooked bacon”! I will probably just put a alice of streaky bacon in.It will cook very quickly.

    Thank you so much, this is a fabulous recipe!!! In case anyone is wondering: I used uncooked bacon, and it turned out great. My hubby and I like our bacon cooked but still wiggly, so if that’s your thing, you don’t have to worry about the fully cooked bacon. 🙂

    You can actually also make them by just using and english muffin or bread on the very bottom and putting the bacon around the edges and the somehow still magically stay together! leaves a little more room for egg too!

    I just made these with vegetarian bacon such a nice and easy breakfast option. The only problem I had was the one egg slid off at first haha had to fix the bacon tighter and use the cheese to kind of seal the edges.

    I don’t eat eggs (a tragedy, i know) and I’m never up when my husband leaves for work. I’d love for him to have these at breakfast. How do you think these will freeze and reheat for a quick morning dash out the door?

    These are a huge hit in my house. I made them on a whim this weekend while we had out of town company. I didn’t have any bacon so I used good quality herb crusted turkey lunch meat and they were so good. My 4 yo keeps asking for them!!!
