Good Thursday everyone!! I am practically jumping out of my old computer seat dying to share my latest cookie with you
A week or so ago as I was making the boys an ice cream shake, I started thinking…..hmmm I wonder how vanilla ice cream would work out in chocolate chip cookies? Well, can I just tell you it worked, and it’s over the top INCREDIBLE! I used a creamy all natural vanilla ice cream by Breyers. I really think any vanilla ice cream would work just fine.
So, what you’ll taste is a delicious very “vanilla-y” flavored chocolate chip cookie. They are soft and perfect. Can’t wait for you all to try this recipe, it was so much fun creating it. I took like 5000 pictures, bear with me I had to share a ton of them
Have fun baking!!
Here’s the line up of most of the ingredients. Your basics, plus….ICE CREAM!
Cream your butter and sugars as usual.
Mix in your large eggs.
And your pure vanilla.
Here’s where the fun begins, get a nice big scoop of your favorite Vanilla Ice Cream. Measures as a heaping 1/2 Cup.
Yummy!!
Our options are endless, can you imagine some other ice cream flavors? Can’t wait to experiment!
Add in your dry ingredients.
And your favorite bag of chocolate chips
Mix until just combined.
Voila’ ready for the cookie sheet.
Bake at 350 degrees F. for 9-11 minutes.

If you like Oreo’s try subbing crushed oreo cookies for the chips and tossing in a huge scoop of cookies and cream ice cream. I used to use ice cream in the cookie dough at the bakery I worked at all the time (and put cookie dough in the ice cream as well!)
I’ve done it w/ cookies and cream, raspberry cheesecake ice cream w/ raspberry chocolate chunk cookies, strawberry ice cream in chocolate chip cookies and my fav, chocolate peanut butter ice cream in peanut butter chocolate chip cookies. I know how much you love peanut butter… this one is AWESOME!

Yes-coffee ice cream would be sooooo good! One of the best Christmas cookies I’ve made was one shared by a friend, and it had vanilla ice cream in it. I was very skeptical, but one bite was enough to convince me!

You are so inventive! I love it. I’m copying this one down and trying it myself. I’m thinking that a chocolate ice cream cookie would be a seriously wonderful experience. Ooooh….dark chocolate ice cream. Mint chocolate chip? OH, I’ve got it…Ben and Jerry’s Phish Food! Marshmallow and caramel swirls in a cookie would be AMAZING!

I would totally recommend taking some classes. I took a workshop with Helen of Tartelette a few months ago and it inspired me to work on getting better at my photography. It has been so much fun. You should check out some upcoming classes. I know there’s a really good one next month in CO that Helen and White on Rice Couple is putting on. Wish I could go to that one!!
So heres the dire question…do they have a unique taste different from a regular choco chip cookie? do they taste like vanilla ice cream? or do they just taste like a regular chip cookie?

They taste just like I mentioned in my write up….like a really good “vanilla like” soft chocolate chip cookie. Maybe you could half the recipe just to make sure they are worth it for you. I think you’ll love them though

You. Are. A. GENIUS!!!! Seriously! We make pizzookies all the time (have baked cookies with vanilla ice cream on the top), but never a cookie with ice cream IN it. Amazing! Perfect for my little dude’s 2nd birthday tomorrow!
Jenny!!! I came home this afternoon and had to make these! OH MY GOSH! They were so delish and I used ButterFinger icecream. I did about 2 scoops of them and I can taste them in my cookies. I just took the last pan out of the oven and had 4 cookies already. They’re soft and moist. YUM YUM! Thank you!

Oh my. Those look so moist! I guess it should work, since ice cream is, at its simplest, milk, cream, sugar, eggs, and vanilla. I can’t wait to try this! Tracy and I have the same idea: a coffee ice cream version. I can almost taste it!
