Ice Cream Chocolate Chip Cookies

Good Thursday everyone!! I am practically jumping out of my old computer seat dying to share my latest cookie with you 🙂  A week or so ago as I was making the boys an ice cream shake, I started thinking…..hmmm I wonder how vanilla ice cream would work out  in chocolate chip cookies? Well, can I just tell you it worked, and it’s over the top INCREDIBLE! I used a creamy all natural vanilla ice cream by Breyers. I really think any vanilla ice cream would work just fine.

So, what you’ll taste is a delicious very “vanilla-y” flavored chocolate chip cookie. They are soft and perfect. Can’t wait for you all to try this recipe, it was so much fun creating it. I took like 5000 pictures, bear with me I had to share a ton of them 🙂

Hi..these sounded wonderful and I made them over the weekend. However, when I just scooped my dough on the parchment lined baking sheet…they did not spread at all and look like a mound of cookie dough….the next pan I gently pressed to flaten slightly and they looked “almost” as good as yours. Both tasted great…I wonder why the difference in look, though…any ideas or suggestions?

This made me feel like a kid again, drooling over cookies which would be placed on a high area wherein we cannot reach and our attempts to get and drool over these yummy cookies. Thanks for this great share.

I make these all the time! We keep them in the freezer… because they are ice cream cookies! They never last more than a day though! I do most of my cooking off of your blog, sometimes two things at a time, I just keep my laptop in my kitchen. Let us know when you put out a cook book I want one! Love you blog and all your yummy recipes!

How much is two sticks of butter? You Americans and your volume measurements, I just don’t get it.

Oh my gosh, I just made these, and they are soooo good! They look just like the picture and taste great! I used Extra Creamy Vanilla, and they definitely taste like both chocolate (from the chips) and vanilla (from the ice cream) at the same time.

btw, these look delicious. but i made these just like your recipe and i don’t know how yours came out like that with 4 cups of flour. mine came out looking like cake balls. not even edible. i’m gonna cut he flour considerably and try again. just wondering if anyone else had the same problem.

    thanks!

Would this work with a brownie recipe? What substitutions would need to be made if you used a boxed brownie mix? Or one from scratch? They look awesome!

  12. Gabby

Just made these with Butter Pecan — they look perfect, will be having a nibble in a bit. Thanks for the fun idea!

I just made these. I only used 1 1/2 teaspoons of vanilla. And I used Cookie Dough Ice Cream (that’s what we had and I figured it certainly couldn’t hurt these cookies!). They are great! They are perfectly soft, but not cakey and look exactly like yours.
    Thanks, Jenny.

I made these with the same ice cream you had, and they were DELICIOUS!!!!! They were gone fast, and so I made MORE!!!! Thanks for a great recipe!

  18. ivoryhut

Oh my. Those look so moist! I guess it should work, since ice cream is, at its simplest, milk, cream, sugar, eggs, and vanilla. I can’t wait to try this! Tracy and I have the same idea: a coffee ice cream version. I can almost taste it!
