Inside Out Chicken Pot Pies and Good Bite Cookbook Giveaway.

I am sharing one of my recipes in the book today called Inside Out Chicken Pot Pies.  It is a breeze to put together and the whole family loves it.  I’ll have a video on Goodbite.com soon demonstrating this recipe!

Inside Out Chicken Pot Pies

1 sheet thawed puff pastry

1 can cream of chicken soup

1 Cup milk (I used skim and it was fine)

1 can chunk chicken, drained (from Costco)

1 can drained mixed vegetables

¼ teaspoon cajun seasoning (I use Emerils)

Pinch of salt and pepper

Pinch of garlic salt

Rosemary Sprigs for garnish, if desired

1. Preheat oven to 400 degrees F. Carefully unfold pastry onto a lightly floured counter. Cut into 9 equal size squares and place onto an ungreased cookie sheet. Bake for about 15 minutes or until golden brown. Set aside.

2. While pastry is baking, whisk together the soup and milk in a large bowl then transfer to a large skillet over medium heat. Add chicken, vegetables and seasonings. Break up chicken pieces with back of fork. Cook and stir until heated through, about 5 minutes.

3. Place puff pastry squares on serving plates and spoon chicken gravy over top. Garnish with sprigs of rosemary if desired.

    One of my favorite quick recipes is White Chicken Chili. It’s super easy (with pre-cooked, pre-measured, frozen chicken) and it’s so yummy.

    Stir fry is such an easy dinner to make- saute some chicken, throw in some frozen veggies, add some soy sauce and spice. Good to go!

    My quick and easy is chicken alfredo — ten minutes to broil the chicken, seven minutes for the pasta, another 10-15 minutes for the homemade sauce – voila! If I’m feeling really industrious I’ll add broccoli to the dish, another three minutes for frozen broccoli in the microwave.

    My favorite quick and easy meal to prepare is a chicken and couscous salad. You simply toss together chicken, red onion, craisins, almonds, cilantro and cucumber and drizzle with lime juice. It’s the perfect meal served hot or cold!

    I make something really similar but with vol au vent shells…which are just puff pastry shells. Easy and everyone loves it.

    For me, it has to be pizza. I make a batch of dough,roll it out and half bake it. When it cools I freeze them. It’s ready whenever I need it. Just top it and throw it in the oven. Tada!

    My favorite quick meal to make is my moms “Chicken and Biscuits… college edition”. It’s easy to make, and still very similar to the time consuming version. Gives me that little taste of home while I’m here at school. :) And, the cuteness factor of the college edition is what takes the cake :)

    Love the recipe. I like to make an easy chicken pomadoro soup. It’s easy becuase I use a roasted chicken that I buy at the market all ready cooked and just add veggies and pasta to the broth.

    Quick Enchiladas, using the costco canned chicken, tortillas, echilada sauce, canned corn and balck beans. Takes about 20 minutes between prep and cook time and my family loves it. Makes enough to freeze and have a 2nd meal!

    My favorite quick and easy meal is soy sauce chicken – soy sauce, sugar, water, green onions, and some garlic and ginger powder and just boil the chicken till it’s done.

    That inside out chicken pot pie looks amazing – my mouth is watering! My favorite quick meal to make is tacos. We usually do a “kitchen sink” version with whatever leftovers and veggies we have in the fridge. Very excited about your cookbook – thanks for such a great giveaway!
