I am sharing one of my recipes in the book today called Inside Out Chicken Pot Pies. It is a breeze to put together and the whole family loves it. I’ll have a video on Goodbite.com soon demonstrating this recipe!
Inside Out Chicken Pot Pies
Equipment
- Oven
Ingredients
- 1 sheet thawed puff pastry
- 1 can cream of chicken soup
- 1 cup milk I used skim
- 1 can chunk chicken drained
- 1 can mixed vegetables drained
- 1/4 tsp cajun seasoning I used Emerils
- 1 pinch salt
- 1 pinch pepper
- 1 pinch garlic salt
- rosemary sprigs for garnish
Instructions
- Preheat oven to 400 degrees F. Carefully unfold pastry onto a lightly floured counter. Cut into 9 equal size squares and place onto an ungreased cookie sheet.
- Bake for about 15 minutes or until golden brown. Set aside.
- While pastry is baking, whisk together the soup and milk in a large bowl then transfer to a large skillet over medium heat.Ā
- Add chicken, vegetables and seasonings. Break up chicken pieces with back of fork. Cook and stir until heated through, about 5 minutes.
- Place puff pastry squares on serving plates and spoon chicken gravy over top. Garnish with sprigs of rosemary if desired.

My favorite is black bean patties. So simple to whip up and they are healthy to boot.
Stir fry is such an easy dinner to make- saute some chicken, throw in some frozen veggies, add some soy sauce and spice. Good to go!
My favorite quick and easy meal is Papa Murphy’s pizza, vegetarian. All I have to do is take and bake! š
My favorite quick and easy recipe is Mexican Rice with grilled Chicken and corn.
One of my favorite quick recipes is White Chicken Chili. It’s super easy (with pre-cooked, pre-measured, frozen chicken) and it’s so yummy.

I made it up when I was craving tacos but of course, we were out of the normal taco things…I scooped up the taco fillings with a tortilla chip and there you go! Easy meal in minutes! š And it’s so much fun to eat too! ;D

My favorite quick and easy recipe is probably spaghetti with meatballs or baked spaghetti. Yum!
We love taking an 8oz. softened cream cheese, spreading it on the bottom of a 9×12 pan. Next, spread a can of chili (no beans) on top. Then top with shredded cheese. Bake at 350 for 20 minutes and then top with shredded lettuce, tomatoes, etc. Eat with tortilla chips! Yummy!

The fastest meal is anything I can throw in my crockpot with no fuss. Usually a pot roast with some potatoes and carrots.

I cheat a little and add 1/4 cup whipping cream to VH’s butter chicken sauce- tastes
