Stovetop Broccoli & Cheese Chicken Pasta

I know I have said it before, but quick and easy dinners are my favorite. This dish has a rich cheesy sauce that gets added to a big pot of broccoli, chicken and pasta. It’s comforting, delicious and will be on your table in about 20 minutes tops 🙂

Here’s the simple cheese sauce that will go into your pasta. It’s pretty fabulous. If you’ve made my Wild Rice Casserole, it is very similar to the one I use there.

How to Make The Best Chicken Pasta Dish

I picked up these fun thin egg noodles for my pasta, but any of your favorite shape or size will do the trick. These egg noodles only boil for 4 minutes, so I kind of love them! The cheese sauce is thick so be sure you don’t overcook your pasta, lots of stirring could smash a pasta that is overcooked 🙂

Drain your pasta and run it under cold water to stop the cooking.

Add your pasta to a big pot then add your broccoli…..

….add your chicken.

Now the fabulous cheese sauce. Mmmm. Give it a good stir, loosen the sauce with a little milk and serve.

Ingredients

  • 1 lb thin egg noodles
  • 1 stick unsalted butter
  • 1/2 cup all purpose flour
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 1/2 cups chicken broth
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups shredded chicken breast cooked
  • 1 lb broccoli florets steamed
  • 1-1 1/2 cups milk

Instructions

  • Prepare egg noodles according to package directions, drain and run under cool water to stop cooking.
  • Melt butter into a medium saucepan over medium heat. Whisk in flour, salt and pepper, whisking until thick and combined. Slowly whisk in chicken broth until combined. Increase heat to high and whisk until thick and bubbly. Reduce heat to low and stir in cheese until melted.
  • Transfer cooked noodles to a large dutch oven or pot over low-medium heat. Add chicken, broccoli and cheese sauce, stirring; will be thick. Stir in milk to loosen sauce to your liking. Serve immediately. This dish does best when served as soon as possible. If needed to be prepared ahead of time, add additional milk or chicken broth to loosen sauce.

    I have some questions..
    I made this tonight and it did not turn out well.

    The 1 lb noodles, is this before or after cooking weight? I couldn’t find the thin thin egg noodles but got the regular thin ones and I went by precooked weight. The whole thing in one pot I couldn’t even stir it really it was so full and it felt like way too much noodles. I had a HUGE pot too. How necessary is running pasta under cold water? When we sat down to eat the dish was cold. Cold water over the noodles, cold milk when stirring..

    This was most definitely not a 20 min meal. I had to boil chicken and shred it. I had to steam broccoli. I had to shred cheese, chop broccoli. It was about an hour all said and done. Maybe I did it wrong?

    My husband was a champ and cleaned his plate (after microwaving and adding more salt). He doesn’t even like cheddar cheese but he’s eaten it in recipes without me saying it’s in there so I didn’t give him details. He said it was fine. Daughter and I both gave it our best but it just wasn’t good. I felt awful too. SHe could smell broccoli cooking which is one of her fav veggies and didn’t really get to eat any, it rather dissolved into the pasta void. I ended up tossing the leftovers as I knew no one would touch it again. I’m sick about how much money it cost to make this recipe too. Around $15?

    I hope to get some clarification so I can try again maybe. Will try to find the thinner noodles and maybe use less of them. Put the cheese sauce with the noodles and serve broccoli and chicken on the side in case it goes sideways again 😛 I’m sure you want to help us succeed so if anything can help us do that, I appreciate it. We’ve had loads of successes with your recipes before, this was the 1st that didn’t pan out.

    I’d by no means understand. It seems too complex and extremely huge

    Was great. Had to use asparagus and as my son is a protein hater I used protein added rotini instead of egg noodles. Since my son is a little sensitive to salt and pepper and he likes to be involved in his food I let him top with some grated parmasean, he’s a cheese junkie. This is definitely going in the rotation.

    Once with a thicker noodle and it was gross! LOL!
    But I did want to add for anyone who was wondering…each time I make
    this I do freeze batches of this and it reheats and tastes great!

    Do you use any special type of cheddar in this dish? I had some sharp shredded cheddar on hand, but felt like the sauce tasted more ‘chicken broth’ than ‘cheese’. It’s delicious – I’m just wondering if the type of cheese would have made a difference. LOL

    This was really good. The bechemel sauce was AWESOME but in my family, this would feed at least 10 folks. The 4 of us only ate about 1/2 of it. Looks like I don’t have to cook dinner tomorrow!
