This pregnancy I have craved quinoa like crazy.  It is great for an afternoon snack or light dinner.  This is another variation of my Mango Chicken and Blue Cheese Quinoa Salad from a few weeks ago.

You can enjoy this salad room temperature right after you whip it up or chill it in the refrigerator to eat cold.  Either is YUM!  Also, it cooks up in 15 minutes on the stove top.

With my simple lemon dressing you can add just about whatever you like to your salad.  Get creative and have fun eating :)

Here’s what I chose to put in my salad.  Anything goes really!

Once you’ve mixed up your quinoa and ingredients drizzle in my simple lemon dressing.

Ta’da!  Quinoa salad you will gobble up in no time.

Roasted Chicken Quinoa Salad

Roasted Chicken Quinoa Salad 1 text Ingredients

  • 1 cup dry quinoa
  • 2-3 cups broccoli florets
  • 1 cup cooked shredded chicken breast
  • 1/2 cup shredded carrots
  • 1/2 cup chopped kalamata olives
  • 1/2 cup chopped roasted red bell peppers
  • 1/4 cup grated parmesan cheese
  • 1/2 cup crumbled feta cheese

Simple Lemon Dressing

  • 1/2 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Cook quinoa according to package directions. When done cooking, transfer it to a large bowl and toss with a fork. Let cool for 30 minutes or so tossing every 5 minutes.
  2. Add broccoli, chicken, carrots, olives, roasted red bell peppers, parmesan and Feta cheese to quinoa, stirring to combine.
  3. To make dressing, place oil, lemon, salt and pepper into a mason jar with a lid. Close lid and shake for 30 seconds or so until well combined. Pour over quinoa and stir to combine. Taste and add additional salt and pepper to taste. Serve room temperature or chilled.

Makes 4-6 Servings

    I love cold and refreshing quinoa salads! I love how the quinoa and the dressing get all stuck in the broccoli so you never miss a flavor in every bite. Yum! Great post! Hope your little one is doing alright!

    so the broccoli and carrots are uncooked? I can see it good either way, right now I think of quinoa as a substitute for rice, so I am thinking stir fry-ish here…but as a salad, it would make more sense uncooked, yes?

    I used quinoa for the first time this week and have been looking for more fun recipes for it. This looks tasty!!

    Yes – uncooked broccoli and carrots. Totally a delicious salad and so light and awesome. I used some costco rotisserie chicken – 2 cups actually and used a raw red bell pepper. Great dish!
