My favorite seafood dish is paella. I’ve only had it once and it was home-make by an office mate of mine way back when. I can still taste the clams, shrimp, scallops, sausage, rice and sauce that went into this dish. I’d love to try and make it someday when I have some extra money and another couple to invite to share it with us. Serve with a sangria…heaven!

I made barbeque shrimp skewers last night. Shrimp pairs really well with some Sweet Baby Ray’s!
Tortilla Crusted Tilapia
Pasta with mushrooms, tomatoes, a light creamy sauce and all types of shellfish! Yum! 🙂
I love to let the flavor of seafood speak for itself, so a simple recipe helps me to accomplish that! I love to sauté scallops in a little butter and EVO. Arrange them on a bed of spinach and pine nuts. Dress with lemon juice. The heat from the scallops is enough to wilt the spinach, and the lemon ties all the flavors together. Simple, fresh ingredients, uncomplicated recipe = delicious, nutrient dense meal!
Clams Oreganata from Little Italy in New York! Perfect little morsels!
