Chocolate Peanut Butter Cake for One

Mini Chocolate Peanut Butter Layer Cake

Thank you for all of your sweet congrats, I must say I am a bit embarrassed, I was so sure I had been blogging for 5 years that I never bothered to really check. I did go back and check and have been blogging for 4 years, not 5. Thanks!!

Someone is turning 4 years old this month….can you guess who? Picky Palate, yay!

Boy, does time fly. I remember the very first night I started Picky Palate on blogspot not having the foggiest idea what I was doing or what the future would hold for me. If someone would have told me I would have a cookbook in the works 4 years ago, I would have never believed it.

It’s funny how life takes you in unexpected directions. I am so grateful to be able to write this website for all of you, it is truly my dream job.

Ok, enough of the sappy stuff, can we talk about this fun little cake…for one? I love individual servings and this tiny cake is peanut buttery chocolatey delicious 🙂  Let’s take a look.

How to Make This Tiny Cake

Start with the dry ingredients. Flour, sugar, cocoa powder, baking soda and salt.

Add your oil, vanilla….

…egg and

melt your chocolate chips and…

add to the bowl.

Give it all a good mix.

Ahhh, perfect!

To bake the little cake, I used an empty 12.5 ounce can of Chunk Chicken Breast from Costco. Remove the paper wrapper, wash and dry.

Pour the cake batter into your prepared can, and bake at 350 for 25-30 minutes.

Loosen edges with a knife, let cool for 10 minutes then remove from can 🙂

Once cooled cut cake in half lengthwise.

Time to whip up the peanut butter frosting layer. A little peanut butter, powdered sugar and splash of milk.

Spread peanut butter layer over bottom cake.

Place second cake on top. How cute!

Whip up the chocolate buttercream. Butter, melted chocolate and powdered sugar….Yum!

 

Place frosting on top and frost evenly. Top with your favorite sprinkles and….

Ingredients

  • 1/4 cup all purpose flour
  • 1 tbsp cocoa powder
  • 1/4 cup granulated sugar
  • 1/4 tsp kosher salt
  • 1/4 tsp baking soda
  • 1 large egg
  • 2 tbsp canola or vegetable oil
  • 1/4 tsp pure vanilla extract
  • 1/4 cup semi sweet chocolate chips
  • 1/4 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 tsp milk
  • 1/4 cup semi sweet chocolate chips
  • 4 tbsp unsalted butter
  • 1/2 cup powdered sugar

Instructions

  • Preheat oven to 350 degrees F. and spry 12.5 ounce can with non stick cooking spray.
  • Place flour, cocoa, sugar, salt, baking soda, egg, oil and vanilla into a large mixing bowl. Melt chocolate chips in a microwave safe bowl in 30 second intervals until smooth. Pour into bowl and mix all ingredients until well combined.
  • Pour batter into prepared can and bake for 25-30 minutes or until baked through. Remove and loosen edges with a knife. Let cool for 10 minutes then remove from can by flipping over firmly. Let cool completely then cut in half lengthwise.
  • Place peanut butter, powdered sugar and milk into a small bowl and mix until smooth. Spread over bottom cake and place second cake on top.
  • Place chocolate chips in microwave safe bowl and melt in 30 second intervals until smooth. Place butter and powdered sugar in small bowl, mixing to combine and add melted chocolate, mixing until combined. Spread evenly over cake and top with sprinkles.

    I am making this little cake tonight. I can’t wait. Is there a way to modify it to make it a vanilla cake? My niece has been asking to cook with me and I thought this would be a fun little treat, but she is not a fan of chocolate cake. I know what is wrong with her. LOL

I just wondered if it was possible to double or maybe triple the recipe to make it a regular sized cake, and if so you, do have any suggestions to what degrees it should be baked and for how long?     HI! I had a question for you. I just made your chocolate peanut butter cake for one- which is very good- sinful good- but it had a big hole in the middle of the cake. I made it twice and it did the same thing again. so i had to use half of the one cake and half of the other. I was just wondering if you knew why this happened? Thanks for your help! Tiffany

      Hmmm, my guess is that it wasn’t baked long enough. If you make it again, try baking it for 10 or so more minutes to see if that helps 🙂

    I was cruising your recipes and found this adorable little cake!!! I can’t wait to try it!! Perfect topper for a cupcake display I am doing!! One question: Do you have a suggestion as to how I could make it without the cocoa? Need it to be vanilla/yellow/white/ or pretty much ANY flavor except chocolate… just leave out the cocoa?     Live alone, 82 years old and if I made a whole cake I wouldn’t be able to keep away from it.. Couldn’t find the Chicken, but did find the same size can of Tuna.. so will make that up and then scrub and scrub again the can.. I plan to make this and be able to have my cake and eat it too. Always looking for small amounts to make, without “leftovers”..

      Just an added comment… to cut the cake in half horizontally, place toothpicks around at the halfway point.. Place a thin string or heavy thread JUST under the toothpicks, then pull the 2 ends across each other.. a very neat cut and EVEN.. ( Pull the left end with your right hand and the right end with your left hand and atretch out the ends )

    I went to the supermarket to buy the canned chicken but could only find canned tuna and the can stunk! I thought after soaking it with soap overnight and washing it a few times the next day would help, but after trying two times to bake the cake it always had a weird fishy smell to it. Did you not encounter this issue with the chicken can? I’ll have to go out and try to find some at another local store.
