Wow you received quite a response! I found your blog while googling a recipe for Paradise Bakery Cookies (Chocolate Chip). I haven’t had luck with that one yet, but really love your site and recipes! I know it is simple, but I love potato soup. It’s a great comfort food!

I love baked cheesy potato soup. My favorite is Applebees but since that isn’t really frugal we’ve tried our hand at some, they don’t turn out the same, but still good!

Great giveaway! I think I missed the noon cutoff, but I thought I’d still share my favorite.
I love LOVE this soup called Laksa Lemak? I get it at this Malaysian place, and it’s awesome. I’ve googled the recipe a few times and it’s a little over my head, and it’s got some hard to get ingredients when you live in the sticks like I do…but basically it’s a chicken soup, kinda spicy, w/coconut milk in it too I think.
It’s a cure all soup. Headache, eat the soup. Cramps? eat the soup. Seriously…awesome awesome stuff!!

    This is my “latest” favoite.

Chicken Soup with Jasmine Rice and Ginger
    SERVES: 4
1/3 cup plus 1 tablespoon jasmine rice, rinsed
    4 cups water
One 3-inch piece of fresh ginger, peeled
    3 cups chicken broth
1 tablespoon Asian fish sauce or soy sauce
Pinch each of salt and sugar (optional)
    1/2 cup shredded cooked chicken
    2 scallions, thinly sliced crosswise
    2 tablespoons coarsely chopped cilantro

In a medium saucepan, cover the rice with the water. Bring to a boil over high heat. Reduce the heat to low and simmer until the rice is tender and porridgelike, about 25 minutes.
Meanwhile, cut the piece of ginger into slivers: Thinly slice the ginger crosswise; stack the slices, removing the bottom rounded slice, so the stack is stable and easy to work with; cut the slices lengthwise into thin slivers.
Add the chicken stock, fish sauce, salt and sugar to the rice, bring to a simmer and continue cooking over low heat for 10 minutes. Stir in half of the ginger and simmer for 10 minutes longer.
Ladle the soup into shallow bowls, garnish with the shredded chicken, sliced scallions, chopped cilantro and the remaining slivered ginger and serve.
MAKE AHEAD The recipe can be made through Step 3 and refrigerated overnight. When reheating, add extra stock to adjust the consistency.

Mine would have to be the classic Minestrone OR a creamy potato soup. I know they’re quite opposite…but each one is so yummy!
