Hi everyone! The nice folks at Challenge Butter who sent me the coupons for the Facebook Giveaway sent me a lovely package of Nordicware Bakeware last week.

    The last thing I baked was my brother’s wedding cake… and that was in January!! I need to get back in the kitchen and these would get me there for sure! Thank you for the opportunity!

    I baked homemade brownies the other day to see if they were better than the packaged mix I usually buy. Evidently they aren’t, because there are still a couple left, and my normal brownies are gone within hours.

    I have been on a low-carb diet, which makes baking difficult, however I have found a delicious low-carb flax seed bread recipe that I bake each week… just made a batch tonight. I also made low-carb peanut butter cookies tonight.

    The last thing I baked was krispy rice treats. A local chain makes ones my son loves and I couldn’t make them quite the same so it took some experimenting. they weren’t so crisp, a little softer with hunks of marshmallows in them. Turns out you use extra marshmallow, almost twice as much and then add unmelted marshmallows when you are almost finished stirring. Came out good. Before that was Ellie Kriegers’s Breakfast cookies from her Healthy cooking show. I use them as an on the go food. They are soft and cakey, not as cookie like but they are healthy and filling and much better than a protein bar or fast food when you are out and about.

    The last thing I baked was yesterday, some GREAT Toasted Coconut and Chocolate Chunk Cookies that are in Cooking Light this month.
