Meatless Cheesy Spaghetti Recipe

This One Pot Cheesy Spaghetti is a family pleaser and takes less than 20 minutes to prepare. I love simple weeknight dinner recipes, they are literally my favorite recipes to develop on Picky Palate. With just a handful of simple pantry ingredients you’ll have dinner on the table in no time at all. This is an excellent recipe to teach your older children. They can easily prepare this one for the family to have some cooking experience under their belt!

What You’ll Need

Here are the ingredients you need to make one pot cheesy spaghetti at home. See the recipe card below for full details.

  • Olive Oil– Extra virgin olive oil is used to saute the garlic and tomatoes for flavor.
  • Garlic– Use minced garlic for the recipe.
  • Diced Tomatoes– Use your favorite brand of diced tomatoes.
  • Salt– I use kosher salt for my cooking and baking.
  • Pepper– Use freshly ground black pepper for best tasting results.
  • Garlic Salt– I enjoy the Lawry’s brand garlic salt for my recipes.
  • Dried Basil– Dried basil is added to the sauce for Italian flavor.
  • Red Pepper Flakes– The red pepper flakes add a touch of spice.
  • Spaghetti Noodles– You will use broken up spaghetti noodles in this one pot dinner.
  • Shredded Mozzarella Cheese– Shredded mozzarella cheese or fresh sliced mozzarella can be added to the spaghetti to melt if you would like.

How To Make Cheesy Spaghetti

Follow these simple instructions to make this easy one pot dinner. You can add any cooked protein of your choice for protein.

Heat Oil. Heat oil in large skillet over medium heat.

Saute Garlic. Saute garlic for a minute, stirring constantly.

Add Tomatoes and Seasonings. Stir in tomatoes, salt, pepper, garlic salt, basil and red pepper flakes.

Cook Spaghetti Noodles. Add spaghetti noodles and water then cover with lid and boil on medium high for 7-8 minutes until noodles are softened. Remove lid and stir to combine.

Top With Cheese To Melt. Serve like this or top with shredded cheese and close lid for 2 minutes to melt. Remove and serve warm.

Tips For One Making Cheesy Spaghetti

  • Watch Pasta. Be sure not to overcook your spaghetti noodles. I always cook for one minute less than suggested to have a little bite to my noodles.
  • Add Protein. Use your favorite protein for a more hearty meal. I’ve used chopped rotisserie chicken, ground beef, Italian Sausage and even shrimp.
  • Add Vegetables. Saute any of your favorite vegetables to add as well. This is a versatile weeknight meal to get creative with!

How To Serve

Serve this one pot cheesy spaghetti dinner warm, spooned on individual plates. It’s great with garlic bread and a side salad.

Leftovers

Store leftover spaghetti in an airtight container in the refrigerator for up to 3-4 days.

Reheating Instructions

Reheat spaghetti in a heat proof bowl, loosely covered in the microwave. Cook for 60-90 seconds, or until hot.

Ingredients

  • 2 tablespoons Extra Virgin Olive Oil

    I made this and it was so good and flavorful! Our family of 3 ate the whole pot. My only complaint is that it took forever for my pasta to cook in the sauce. It certainly was not 7-8 minutes. More like 20 or longer. I will make again definitely but cook the pasta separately.
