How to Make Pepperoni Pizza Enchiladas
Here’s your line-up, but the fun part is you can get creative with any pizza toppings your family enjoys. Sky is the limit.
I chose to keep it ultra simple and kept it to just pepperoni pizza with some olives on top.
First things first, let’s spread a thin layer of pasta or pizza sauce over the bottom of your baking dish.
Layer each tortilla with sauce, pepperoni…..
…and cheese! This is where you could add more of your favorite toppings.
Place those rolled tortillas into your baking dish seam side down.
Fill your pan nice and full like so.
Top with your remaining sauce.
Add a thin layer of shredded cheese then start adding those pepperonis!
Oh yah!!
I added a few black olives just for the heck of it.
More cheese then into the oven it goes. About 30 minutes and dinner is ready! Enjoy 🙂
Pepperoni Pizza Enchiladas
Equipment
- Oven
Ingredients
- 9 Soft Taco Size Flour Tortillas
- 26 oz jar of pasta or pizza sauce
- 1 package pepperonis
- 3 cups shredded mozzarella cheese
- 1/2 cup small black olives
Instructions
- Preheat oven to 350 degrees F. Place tortillas onto a plate close by. Pour 1/2 cup pasta sauce into 9x11 inch baking dish, spreading evenly.
- To start layering enchiladas, Spread about 2 tablespoons pasta sauce over center of tortillas. Layer with about 4 pepperoni's then top with about 2-3 tablespoons of shredded cheese.
- Roll each tortilla then place seam side down into baking dish. Continue filling and rolling tortillas until all have been placed into the baking dish.
- Top with remaining sauce spreading evenly then add 3/4 cup shredded cheese, then layer with pepperoni and any other pizza toppings you like.
- Finish with more cheese and bake for 25 minutes or until cheese is hot and melted. Remove and serve.

Might have to try these with low carb tortillas and turkey Pepperoni. Add it with a light pasta sauce and light cheese could be good for for the whole family including the hubby who is on diet.

Oh my these are great! We make pepperoni pizza quesadillas, put mozz cheese and pepperoni inside and serve with pizza sauce. SO GOOD and fast! LOVE the enchiladas though, very pretty!
