Pepperoni Pizza Enchiladas

I am having so much fun coming up with simple weeknight dinners for back to school season. Stay tuned for more simple dinner recipes perfect for busy weeknights coming up.

Are your kids back to school already? I know most of AZ seems to be, but we’ve got a few more weeks of summer vacation in CA.

Enjoy friends!

How to Make Pepperoni Pizza Enchiladas

Here’s your line-up, but the fun part is you can get creative with any pizza toppings your family enjoys. Sky is the limit.

I chose to keep it ultra simple and kept it to just pepperoni pizza with some olives on top.

First things first, let’s spread a thin layer of pasta or pizza sauce over the bottom of your baking dish.

Layer each tortilla with sauce, pepperoni…..

…and cheese! This is where you could add more of your favorite toppings.

Place those rolled tortillas into your baking dish seam side down.

Fill your pan nice and full like so.

Top with your remaining sauce.

Add a thin layer of shredded cheese then start adding those pepperonis!

Oh yah!!

I added a few black olives just for the heck of it.

More cheese then into the oven it goes. About 30 minutes and dinner is ready! Enjoy 🙂

Might have to try these with low carb tortillas and turkey Pepperoni. Add it with a light pasta sauce and light cheese could be good for for the whole family including the hubby who is on diet.
