Reeses Peanut Butter Egg Cookies…

Happy Thursday friends! Another week flying right by huh? I have no doubt these cookies will become a new favorite in your household!

I have to admit……these Reeses Peanut Butter Eggs are the death of me. I can NOT resist them, I’ve tried and it just doesn’t work. They are by far my favorite candy in the whole wide world which is why I am grateful that they only come out for Easter! My hips couldn’t take it if I could get these babies all year round!

So, to make matters worse, I have created an incredible cookie for my favorite candy…..and um…..let’s just say…..they are INCREDIBLE! Don’t believe me? Try them for yourself!

Chop the Reeses eggs on the larger side and you’ll get these fabulous chunks in the middle of your cookies!

Reeses Peanut Butter Egg Cookies

2 sticks softened butter

1 Cup packed brown sugar

1 Cup granulated sugar

3 Tablespoons corn syrup

2 large eggs plus 1 egg white

1 Tablespoon pure vanilla extract

3 1/2 Cups all purpose flour

1 1/4 teaspoon baking soda

1/2 teaspoon salt

3 Cups chopped Reeses Peanut Butter Eggs, 12 total eggs (find them in the Easter Candy Section, quick!)  You can also use regular Reeses Peanut Butter Cups 🙂

1. Preheat oven to 350 degrees F. In a stand or electric mixer beat the butter, sugars and corn syrup until well combined….light and fluffy. Beat in eggs and vanilla until well combined.

2. In a large bowl, mix the flour, baking soda and salt. Slowly add to wet ingredients along with the chopped Reeses Peanut Butter Eggs. Mix only until just combined. Using a medium cookie scoop, scoop dough onto a silpat or parchment lined baking sheet. Bake for 9-11 minutes until just turning golden around edges. Let cookies cool for 5 minutes before transferring to a cooling rack. Eat with tall glass of milk!!

    These look AWESOME!! Reese’s eggs are my downfall too….I just can’t resist those holiday inspired guys. They seem to taste soo much better than regular peanut butter cups too. I’m definitely going to have to try these out!

    Saw the recipe the other day so I picked up some eggs thinking I would try it out today. One problem. For some reason I had it in my head that the recipe only called for 8 eggs…and I may have opened one of the packages and had a couple. I just double checked the recipe. Oops! Guess I’ll have to go buy another package! I’ll try not to cry all the way to the store… 😉

    I absolutely love your recipes!

    I live in Utah and we have this placed called Cutler’s bakery. Today I indulged and had a peanut butter finger cookie. It was a peanut butter cookie (with peanut butter chunks) then a peanut butter type frosting then thick milk chocolate frosting on the top. It was amazing..This cookie sounds similar to it so I could be in very big trouble. Do you think it would be overkill to add some frosting to these? (I know, totally overkill on the calories) Thanks for all the wonderful recipes!

    I made these last night for a couple events we have today. Let’s just say I’m glad I only kept 3 at home… or I might have eaten them all! So delicious.

    I had to use about 20 eggs, I think because I bought a big pack of them and they are a smaller size.

    I agree – those resses eggs are the death of me. They do make them in other shapes for some of the other holidays (trees for Christmas, hearts for Valentine’s, etc); I just might have to try this!

    Oh boy, those eggs are the death of me too! I ate a whole pack (yes, ALL 6!) at one sitting when I was pregnant with my daughter. I am surprised she came out ok but now she is a reeces addict! I will be trying these cookies this weekend as they will be a hit over here.

      I picked up those little baskets at a stationary/post office store right across the street from our place. I think it’s called Newport Stationary or something like that. They are actually little candle holders!! I thought they were cute!
