What You’ll Need
Here are the ingredients you’ll need to make this easy chicken spaghetti recipe at home. See the recipe card located at the bottom of the page for full instructions.
- Cherry Tomatoes– You will roast the cherry tomatoes for some delicious flavor added to the pasta.
- Extra Virgin Olive Oil– Olive oil is used to drizzle over the tomatoes and saute chicken and vegetables.
- Kosher Salt– I use kosher salt in my recipes. It’s a coarse salt.
- Black Pepper– For best tasting results use freshly ground black pepper.
- Cooked Chicken– I like to shred a rotisserie chicken to use for my dinner recipes.
- Baby Spinach Leaves– Baby spinach is sauteed to add to the pasta.
- Pesto– Use your favorite prepared pesto.
- Shredded Parmesan Cheese– Use a freshly shredded Parmesan Cheese for best tasting results.
How To Make Easy Chicken Spaghetti
Preheat Oven. Preheat oven to 350 degrees F.
Roast Tomatoes. Place tomatoes on baking sheet, drizzle with oil and sprinkle with salt and pepper. Bake for 15-20 minutes, until tomatoes have collapsed. Remove and set aside.
Cook Pasta. Cook pasta according to package directions. Drain and set aside.
Cook Spinach and Chicken. Heat oil in large skillet over medium heat. Add chicken and spinach, stirring until spinach is wilted.
Pasta and Pesto To Pot. Place cooked pasta, pesto, tomatoes and parmesan cheese. Toss gently and serve hot.
Recipe Tips For Success
- Don’t Overcook Your Pasta. I like to undercook my pasta about a minute less than recommended on the box.
- Roast The Tomatoes. Don’t skip roasting the tomatoes, it brings such a punch of flavor when the tomatoes are roasted.
- Add Different Protein. Play around with different protein for your pasta. Sliced steak is also delicious.
How To Serve
Serve this chicken spaghetti warm on individual serving plates or bowls. Garlic bread is always a nice side along with a chopped green salad.
Leftovers
Store any leftover spaghetti in an airtight container for up to 3 days in the refrigerator.
Reheating Instructions
Reheat spaghetti on a heat proof plate or bowl loosely covered in the microwave for 60-90 seconds, or until hot.
