Sharing a low carb keto pizza option today! My Zucchini Pizza is layered with fresh zucchini slices, pasta sauce and lots of cheese.It’s also keto friendly!
Keto Pizza
I’ve been enjoying eating low carb during the weekdays and created this delicious zucchini pizza skillet this week! It’s cheesy and so flavorful, even my teenagers enjoyed it!

What You’ll Need
- extra virgin olive oil– You’ll use the olive oil to brush the bottom and sides of your cast iron skillet.
- medium sized zucchini’s x 2– Check your produce section for a nice firm zucchini.
- kosher salt– This course salt will season the zucchini slices.
- freshly ground black pepper– For best tasting results, I always use freshly cracked black pepper.
- dried oregano– You’ll season the pizza with a little dried oregano. Gives that nice pizza flavor.
- marinara/pasta sauce– Use your favorite jarred pasta or marinara sauce for the recipe.
- grated Parmesan cheese– I like to grab the fresh Parmesan in the refrigerated section of the grocery store.
- shredded mozzarella cheese– Shredded cheese goes on top of the pizza before baking.
- pepperoni slices– Use your favorite pepperoni slices. Trader Joe’s has a good one I use often.
- fresh basil (optional)– Fresh basil is a lovely touch to the top of the pizza if you have it available.
How To Make Keto Pizza
- Preheat oven to 350 degrees F. and pour olive oil into bottom of 8 inch cast iron skillet swirling to coat bottom of skillet.
- Start layering zucchini slices into bottom of skillet. When one layer covers the bottom of the skillet, season zucchini slices with a pinch of salt, oregano and pepper. Continue this same method until all of your zucchini slices have been used. Spoon pizza sauce over zucchini slices, sprinkle with Parmesan cheese, then top even with shredded mozzarella cheese. Top with quartered pepperoni slices, sprinkle with a pinch or two more dried oregano and bake for 25-30 minutes, until cheese is bubbly and melted. Remove from oven, garnish with a sprig of fresh basil and serve hot by spooning onto serving plates. This pizza is not meant to cut into wedges. Also note, be cautious of the hot skillet handle. The cast iron skillet stays very hot for quite a long time.
Layer zucchini slices into bottom of cast iron skillet seasoning each layer with salt, pepper and oregano.
What Is A Keto Diet?
The ketogenic diet is a high-fat, adequate-protein, low-carbohydrate, low sugar diet. This reduction in carbs puts your body into a metabolic state called ketosis. The Keto diet can help you lose weight and improve your health. When starting a new diet, always consult with your doctor.
Spoon marinara sauce evenly over zucchini slices.
Sprinkle top of marinara sauce with grated Parmesan Cheese and top with shredded mozzarella cheese.
Place quartered pepperoni slices over shredded cheese and sprinkle with more dried oregano.
Bake at 350 degrees F. for 25-30 minutes, until hot and cheese bubbly. Serve hot, being careful of the hot cast iron skillet when serving. Place a towel or hot pad that fits the handle to prevent burns.
Now this is how I like my zucchini! So good.
How To Serve Zucchini Pizza
This zucchini pizza is meant to be spooned onto a plate or into a bowl. Not intended to be cut into wedges like traditional pizza. Serve hot/warm with a side salad if desired.
How To Store Leftovers
Store any leftover pizza skillet in an airtight container in the refrigerator for up to 3 days. Microwave as needed to warm.

- 1 tablespoon extra virgin olive oil
