Zucchini Pizza Skillet – Keto Pizza

This low carb keto pizza is packed with flavor and so easy to make! My Zucchini Pizza is layered with fresh zucchini slices, pasta sauce and lots of cheese.

Zucchini Pizza

I’ve been enjoying eating low carb during the weekdays and created this delicious zucchini pizza skillet this week! It’s cheesy, layered with tender zucchini slices, cheese, pepperonis, and it’s so flavorful. I was so happy to see that even my teenagers enjoyed it!

What You’ll Need

Here are the simple to find ingredients you’ll need to make your own zucchini pizza at home! See the recipe card at the bottom of the post for full instructions.

  • extra virgin olive oil– You’ll use the olive oil to brush the bottom and sides of your cast iron skillet.
  • medium sized zucchini’s x 2– Check your produce section for a nice firm zucchini.
  • kosher salt– This course salt will season the zucchini slices.
  • freshly ground black pepper– For best tasting results, I always use freshly cracked black pepper.
  • dried oregano– You’ll season the pizza with a little dried oregano. Gives that nice pizza flavor.
  • marinara/pasta sauce– Use your favorite jarred pasta or marinara sauce for the recipe.
  • grated Parmesan cheese– I like to grab the fresh Parmesan in the refrigerated section of the grocery store.
  • shredded mozzarella cheese– Shredded cheese goes on top of the pizza before baking.
  • pepperoni slices– Use your favorite pepperoni slices. Trader Joe’s has a good one I use often.
  • fresh basil (optional)– Fresh basil is a lovely touch to the top of the pizza if you have it available.

How To Make Keto Pizza

Preheat oven to 350 degrees F. and pour olive oil into bottom of 8 inch cast iron skillet swirling to coat bottom of pan.

Layer Zucchini. Start layering zucchini slices into bottom of skillet. When one layer covers the bottom of the skillet, season zucchini slices with a pinch of salt, oregano and pepper. Continue this same method until all of your zucchini slices have been used.

Add Pizza Sauce and Cheeses. Spoon pizza sauce over zucchini slices, sprinkle with Parmesan cheese, then top even with shredded mozzarella cheese.

Top With Pepperoni. Top with quartered pepperoni slices, sprinkle with a pinch or two more dried oregano.

Bake for 25-30 minutes, until cheese is bubbly and melted. Remove from oven, garnish with a sprig of fresh basil and serve hot by spooning onto serving plates. This pizza is not meant to cut into wedges. Also note, be cautious of the hot skillet handle. The cast iron skillet stays very hot for quite a long time.

Recipe Tips For Success

  • Watch pizza carefully so that you don’t overcook the zucchini. It’s best slightly undercooked as it will continue to cook slightly in the hot skillet when removed from the oven.
  • Be careful when serving, the cast iron skillet stays hot for a while after it’s removed from the oven.
  • Put a heat proof sleeve over the cast iron skillet handle to prevent burns when handling.

How To Serve Zucchini Pizza

This zucchini pizza is meant to be spooned onto a plate or into a bowl. Not intended to be cut into wedges like traditional pizza. Serve hot/warm with a side salad if desired.

How To Store Leftovers

Refrigerate. Store any leftover pizza skillet in an airtight container in the refrigerator for up to 3 days.

Reheating Instructions. Microwave as needed to warm up by placing a spoonful of the zucchini pizza into a heat proof bowl. Lightly cover and heat for 60 seconds or until hot.

    This is so good! I had it 3 times this week. I only use one zucchini and adjust the other ingredients as necessary because this is just for me. So yummy!
