Thin Mint Double Chocolate Chip Cookies 2t

Thin Mint Girl Scout Cookies are definitely some of my favorites!  Have you tried them frozen?  Oh my they are fabulous.  Today I bring you a chocolatey fudgy cookie with ground thin mints throughout.

No fuss here, just some basic pantry staples and of course a few Thin Mints.  Don’t worry, you’ll still have plenty to stick in the freezer, lol!

It’s a beautiful sight isn’t it?  AND we are helping our community right?  Love all the adorable Girl Scouts.  They don’t have to twist my arm to buy 20 boxes a box.

Ingredients

Here are some of the lovely ingredients you’ll be using today.

Let’s start by creaming your butter and sugars.

egg and vanilla

Add an egg and some vanilla.

flour and cocoa

Dry ingredients!

Thin Mints

There are a number of ways to crush your Thin Mints.  You can stick them in a blender for a few minutes or food processor or even pound them with a rolling pin inside a ziploc bag.  Take your pick.

cookies and chips

Add your crushed cookies and chocolate chips right to the bowl and give a good mix.

Time to bake!  Press down each cookie ball before baking, they cook much nicer that way.

Thin Mint Double Chocolate Chip Cookies

Thin Mint Double Chocolate Chip Cookies 2t Ingredients

  • 1 stick/1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown brown sugar, packed
  • 1 large egg
  • 1/4 teaspoon pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon corn starch
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups mini chocolate chips
  • 8 Thin Mint Girl Scout Cookies, finely crushed

Directions

  1. Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
  2. Cream butter and sugar until light and fluffy. Add egg and vanilla, mixing to combine. Add flour, cocoa powder, baking soda, corn starch, salt, chocolate chips and crushed Thin Mints, mixing until just combined.
  3. Scoop dough onto prepared baking sheet about 1 inch apart, pressing cookies down almost flat before baking. Bake for 10-12 minutes until baked through. Let cool for 10 minutes on baking sheet before transferring to cooling rack. Serve with milk and enjoy!

Makes about2 dozen

    Can I just say that I LOVE that you MADE cookies WITH Thin Mint Cookies?? These look incredible and are probably 8302 times better than regular old Thin Mints!

    Since I have 4 boxes of Thin Mints, I need something else to do with them rather than eat a sleeve at a time…BORING. These cookies are the perfect solution! YUM.

    These remind me of the oreo double chocolate cookies you made a while back. I bet these cookies are delicious. Love me some thin mints and frozen is the way to go!

    These are my favorite cookies!! I love that you incorporated it throughout this entire recipe. I love it. I would freeze a large batch so I can have it once girl scout season is over :)

    thin mints are my fav…the hard part would be not to eat them before incorporating them into this cookie recipe :-)
