I’ve got another crock pot dinner for you today! I call it my Slow Cooker Creamy Chipotle Chicken Tortellini. This one is great for Sunday dinner or even weeknights. You’ll need just a few basic pantry ingredients to get started.
Can you even believe we are into March already? This year is flying! The school year is going to be over before we know it. Let’s all breath and try to slow this year down together, lol!
Let’s take a look at how to put together the recipe.
Here’s your line up of ingredients. You can find the chipotle sauce in the Mexican section of your grocery store. I wanted to use the dry tortellini, but couldn’t find them. Fresh works too, but the dry tortellini is much less expensive if you can find it!
There are a couple of options for cooking your chicken. You can slow cook them like I have pictured here for 3-4 hours on high. Or you can bake them at 350 loosely covered with foil for about 50-60 minutes. Once the chicken is cooked, shred it into bite size pieces.
After your chicken is cooked, remove it from the crock pot and add your chicken broth then cream cheese.
Add your broccoli.
Add your tortellini.
Straight to the crock pot.
Add your shredded chicken to the crock pot.
Add your cumin, chipotle sauce, salt and pepper. Cook on high for 2 hours then time to enjoy!

Comfort food at its best! I love the hint of cumin in this, Jenny! Need a crockpot in my life, lol!
Yes you do Kiran!!
I so wish we had crockpot here in Europe !
I’m really impressed the tortellini are not over backed after 2 hours ?!
No crockpots in Europe?!! Yikes, I wouldn’t like that at all
This looks like something my kids would love (and I love the fact that it’s a slow cooker meal)! Does the chipotle make it really spicy? I’m trying to decide whether or not I should leave that ingredient out since I’m feeding toddlers.
Thanks!
The amount of chipotle sauce I put in did not make it spicy, you can add more or less as desired
Sounds delicious! Now that I look at the recipe and see you are only using half the can of chipotle sauce, any suggestions for the rest? Can it be frozen? Is the sauce available in a bottle w/ lid? Thanks!
Creamy broccoli with spicy chipotle sauce sounds amazing for a pasta!
Love my slow cooker! My boys will love this one, Jenny. Great idea!
I love this! I’m all about slow cooker meals lately, so this is going on this to-do list!
Love tortellini meals!

perfection in a bowl!
What a fun an d creative way to have a delicious chicken dinner! Adding these ingredients to my grocery list!
I can’t breathe.
I’m all about slow cooker meals lately!! It’s a lifesaver with an infant around
This looks fabulous!!
Love slow cooker meals, especially those involving tortellini!
This looks yummy, but why pour off the broth the chicken originally cooked in….would this broth have a lot of flavor?
Hi Susan, glad you brought this up, you can absolutely use the initial chicken broth, but it had all the chicken fat floating throughout. You could drain it and it’d be just fine.
This is such a great idea for dinner tonight!! Thank you Jenny
I can’t believe it! You have the same little glass cup (top photo) that I have. Do you have the snack plate/tray that goes with the cup? My aunt had these for decades and gave me half of hers. The cup fits tightly into one of the sections on the rectangular plate. One of the sections on the plate has an indentation to hold a cigarette! Isn’t that wild?! So people could walk around with their plate, complete with built-in ashtray, and smoke too!
You have solved my dilemma for dinner tonight! I already had the chicken out this morning wondering what to make with it. And my kids will love this! I am starting it right away…can’t wait! Thanks you, Jenny(=
I love the variety of textures and flavors in this dish!
This looks delicious, and so easy! Definitely trying this soon. Such a good dinner idea.
Girl, you have been rocking that pink Crock-Pot! Love this idea.
I really need to invest in a crock pot! By the way, I was at the doctor’s office the other day reading through some magazines and I saw a picture of you in one of them! I was so excited! I had no idea you worked with Cool Whip! You looked FAB btw!
Yummy! Pinned for later!

Might be a dumb question…but is it really 8 cups of broccoli? That seems like a lot…
Other than that, I am so making this tomorrow.
