Slow Cooker Chicken Tortellini

Sharing our favorite chicken tortellini today! My slow Cooker Chicken Tortellini makes the perfect home cooked dinner for your family and friends. It’s creamy, simple to put together and has just the right amount of kick to it.

Chicken Tortellini

I’ve got a delicious crock pot dinner for you today! My Slow Cooker Creamy Chipotle Chicken Tortellini is great for Sunday dinner or even weeknights. You’ll need a handful of basic pantry ingredients, to get started. Let’s take a look at how to put together the recipe.

What You’ll Need

  • boneless chicken breast– I look for medium sized chicken breasts for this recipe. Make sure packaging says boneless and skinless chicken breast.
  • chicken broth– Be sure to look for reduced sodium chicken broth. I prefer adding salt to my recipes, rather than having a chicken broth with more salt.
  • cream cheese– Full fat cream cheese is what I prefer for the recipe.
  • tortellini– You can use tortellini that’s in the refrigerated section near the cheeses or pick up the dried tortellini in the pasta section.
  • chipotle sauce– Find the chipotle sauce in the ethnic or Mexican foods section of the grocery store.
  • broccoli florets– You can cut your own broccoli florets or get the bag of florets already cut into florets.
  • ground cumin– Ground cumin gives the perfect spice to the recipe. It’s fragrant and smoky. Find it in the spices section of the grocery store.
  • kosher salt and black pepper– Kosher salt is a coarse salt that is commonly used in cooking and baking. It’s near the table salt. For best tasting results use fresh cracked black pepper.

There are a couple of options for cooking your chicken. You can slow cook them like I have pictured here for 3-4 hours on high. Or you can bake them at 350 loosely covered with foil for about 50-60 minutes. Once the chicken is cooked, shred it into bite size pieces.

How To Make Slow Cooker Chicken Tortellini

  1. Heat crock pot to high setting. Place 1 cup chicken broth into crock pot over chicken breasts. Cook for 3-4 hours until easy to shred with a fork. Discard broth and shred chicken into bite size pieces.
  2. Pour 32 ounces of chicken broth into crock pot. Place cream cheese, broccoli, tortellini, shredded chicken, chipotle sauce, cumin, salt and pepper into crock pot. Close lid and cook on high for 2 hours. Stir gently to combine cream cheese. Serve in bowl. Top with pepper.

After your chicken is cooked, remove it from the crock pot. Add your chicken broth and cream cheese.

Add your cumin, chipotle sauce, salt and pepper. Cook on high for 2 hours.

How To Serve

Serve chicken tortellini hot in individual serving bowls. Top with your favorite hot sauce and even some shredded cheese if you’d like. It’s great served as is too.

Leftovers

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat as needed.

Ingredients

  • 1 cup reduced sodium chicken broth

  • 1 pound tortellini dry or fresh
  • 8 cups broccoli florets
  • 4 tablespoons chipotle sauce If the can has whole chipotle peppers, use the sauce from it
  • 2 teaspoons ground cumin
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

    I know this is an old post, but I just saw this recipe on Pinterest and made it for my family tonight. They couldn’t stop raving about how great it was! I strained the original chicken broth that was used to cook the chicken breasts and put it back in the crockpot. I also used La Victoria Salsa Brava Hot Sauce instead of the chipotle sauce because I didn’t have any on hand, and it still worked great! The dish had a nice, mild kick to it. Will definitely be making this again!! 🙂

    Eek… I normally LOVE your recipes, but this was a huge flop! There was almost no flavor and there is no way you put the broccoli in the picture here in your crock pot for two hours. The broccoli was WAY overdone! It would be better to steam it separately and add it at the end or at least add it part way through.

    Hi! If I use dry tortellini, are the directions exactly the same (i.e. toss it in dry and cook on high for 2 hours), or should I cook the tortellini according to package directions and then add it to the slowcooker?

    Has anyone tried this on low for longer period of time? I wanted to make it tonight but between school pick up and gymnastics we will be gone 3-4 hours so I won’t be home after 2 hours to turn it off. I don’t want to end up with mushy tortellini. Thoughts?

    Is chipotle sauce the same thing as using the sauce from a can of chipotles in adobo sauce?

    Hi im about to cook this i just have a question. I have decided to cook my chicken in oven, im just wonering if i have to add chicken broth as well or thats only if im using the crockpot?

I am OBSESSED with anything chipotle, it’s a little sad. 🙂 I really want to know where you found canned chipotle sauce though?? All I can find is chipotle peppers in adobo sauce! I have seen this La Costena can though in this blog and others. Please tell me which store you found this! Thank you!

      Lauren, I apologize for just now getting back to you. Chipotle peppers in adobo sauce is the same thing as chipotle sauce so you (were) on the right track. The can with whole chipotle peppers also has sauce in it. 🙂

    I saw this recipe on pinterest and it sounded good so i tried it today and i really did not like it. The chipolte flavor did not taste good on the tortellini and the chicken didn’t taste good with it either. I did the exact measurements and cooking time but it wasn’t creamy like I’d hoped.

    Hi Jenny. I have a question. I have several cans of “chipotle peppers in adobo sauce” that I use for one of my favorite soup recipes. How would you say this compares with the chipotle sauce called for in this recipe? I went ahead and put in 4 Tbsp of the adobo sauce but I’m nervous now that it will either ruin the flavor or make it too hot or something. What do you think? Are you familiar with the canned chipotle peppers in adobo sauce?
