I’ve got another crock pot dinner for you today! I call it my Slow Cooker Creamy Chipotle Chicken Tortellini. This one is great for Sunday dinner or even weeknights. You’ll need just a few basic pantry ingredients to get started.
Can you even believe we are into March already? This year is flying! The school year is going to be over before we know it. Let’s all breath and try to slow this year down together, lol!
Let’s take a look at how to put together the recipe.
Here’s your line up of ingredients. You can find the chipotle sauce in the Mexican section of your grocery store. I wanted to use the dry tortellini, but couldn’t find them. Fresh works too, but the dry tortellini is much less expensive if you can find it!
There are a couple of options for cooking your chicken. You can slow cook them like I have pictured here for 3-4 hours on high. Or you can bake them at 350 loosely covered with foil for about 50-60 minutes. Once the chicken is cooked, shred it into bite size pieces.
After your chicken is cooked, remove it from the crock pot and add your chicken broth then cream cheese.
Add your broccoli.
Add your tortellini.
Straight to the crock pot.
Add your shredded chicken to the crock pot.
Add your cumin, chipotle sauce, salt and pepper. Cook on high for 2 hours then time to enjoy!

You can get crockpots anywhere just run a Google search, also available on Amazon.
This looks like something my kids would love (and I love the fact that it’s a slow cooker meal)! Does the chipotle make it really spicy? I’m trying to decide whether or not I should leave that ingredient out since I’m feeding toddlers.

The amount of chipotle sauce I put in did not make it spicy, you can add more or less as desired
Sounds delicious! Now that I look at the recipe and see you are only using half the can of chipotle sauce, any suggestions for the rest? Can it be frozen? Is the sauce available in a bottle w/ lid? Thanks!

This looks yummy, but why pour off the broth the chicken originally cooked in….would this broth have a lot of flavor?
Hi Susan, glad you brought this up, you can absolutely use the initial chicken broth, but it had all the chicken fat floating throughout. You could drain it and it’d be just fine.

I can’t believe it! You have the same little glass cup (top photo) that I have. Do you have the snack plate/tray that goes with the cup? My aunt had these for decades and gave me half of hers. The cup fits tightly into one of the sections on the rectangular plate. One of the sections on the plate has an indentation to hold a cigarette! Isn’t that wild?! So people could walk around with their plate, complete with built-in ashtray, and smoke too!

I just love creamy recipes waaay too much, but I know this one would be worth every bite!
Jenny – Absolutely LOVE everything you do – especially the sweets. Made this today – it was GREAT. But the sauce is a little thin, so I added a slurry of cornstarch to thicken it up. Also, cut the pepper sauce in half and let people add if more heat was desired. Will definitely make this again.
I made this last night it was super yummy! I added some eggplant because I had it and needed to use it. The kids loved it!
I made this for dinner tonight and I used rotisserie chicken because I didn’t have time to cook chicken in the oven and I also used a red pepper purée instead of chipotle peppers and it came out amazing. Thank for the awesome dinner idea!!
I have not eaten this yet because it is still cooking but I did find it funny that in the direction steps none of them said anything about putting the tortellini in. I got all done putting everything step by step into the crock pot and all I could think was ………….. something is missing…LOL I did obviously figure it out but still, LOL!!! I did add Nibblet Corn too.

Fantastic recipe thanks. Made it yesterday and it went down a treat. Only addition I made was some lightly roasted pumpkin seeds sprinkled over the top. My family love these and they’re so good for them.
Hi Jenny. I have a question. I have several cans of “chipotle peppers in adobo sauce” that I use for one of my favorite soup recipes. How would you say this compares with the chipotle sauce called for in this recipe? I went ahead and put in 4 Tbsp of the adobo sauce but I’m nervous now that it will either ruin the flavor or make it too hot or something. What do you think? Are you familiar with the canned chipotle peppers in adobo sauce?
Hi Marie, those are perfect! The sauce in the chipotle peppers is exactly the same. I would just use the sauce though
I saw this recipe on pinterest and it sounded good so i tried it today and i really did not like it. The chipolte flavor did not taste good on the tortellini and the chicken didn’t taste good with it either. I did the exact measurements and cooking time but it wasn’t creamy like I’d hoped.

hello! I just threw chicken in the crockpot to get this recipe going. I am OBSESSED with anything chipotle, it’s a little sad.
I really want to know where you found canned chipotle sauce though?? All I can find is chipotle peppers in adobo sauce! I have seen this La Costena can though in this blog and others. Please tell me which store you found this! Thank you!
