Here’s your line up of ingredients.  Nice and simple.  Use a food processor or cheese grater to shred your zucchini.  I also used the bloc of chocolate from Trader Joe’s and cut it into small chunks.

Yum! Loving the chocolate drizzle on top… These muffins are definitely being pinned. Trader Joe’s chocolate is the best for baking, isn’t it?

What size do you shred your zucchini? Does it matter? Looks great!

      Jenny says:

      Hi Jody,
I just used a regular size cheese grater to shred. I’d say it was a medium shred. I don’t think it would affect the muffins if the shred size varies.

I love these! They look so indulgent – but let’s stick with muffin – it sounds better than cupcake right? If I stick with muffin I can have an extra one, right?

Another great recipe, Jenny! My sister gave me three zucchini, which I hate as a vegetable but love in baked goods. Instead of melting the last cup of chips to use as a drizzle, I just added that extra cup of chips to the batter. Delicious!
