Caramel Apple Recipe
This adorable caramel apple recipe was shared in video form from Disney Parks Blog back in 2016! I am so glad it was brought to my attention, because I created an at home version for us! We all NEED some Mickey caramel apples in our lives. in all honesty, the caramel apples are pretty simple to prepare once you have your ingredients on hand and ready to go. They really taste little little pieces of caramel apple pie. So good with the tart juicy apples. You’ll love these!

What You’ll Need
Here are the ingredients you’ll need to make apple pie caramel apples at home. See bottom of post’s recipe card for full details.
- 4-5 Granny Smith firm apples– Granny Smith Apples are sweet and tart, they work great for the recipe.
- sticks for apples– Mine were cake pop sticks I had on hand. Popsicle sticks would even work
- caramel bits or individual melting caramels– Kraft works great
- Ghirardelli White Melting Wafers– Find melting wafers in the baking section of the grocery store. I prefer the Ghirardelli brand.
- granulated sugar– You’ll use this white fine sugar for the cinnamon/sugar mixture.
- ground cinnamon– Ground cinnamon gives the apple pie it’s great spiced flavor.
- graham cracker crumbs– Graham cracker crumbs will give the apples their “pie” flavor.
- marshmallows– You’ll use regular size marshmallows to make the Mickey Ears.
- toothpicks– Toothpicks will hold marshmallows in place.
How To Make Caramel Apples
- Remove Stems. Remove the stems from apples and push sticks into center of each apple. Leave enough stick exposed so you can easily hold the apple.
- Melt Caramels. Unwrap each caramel and melt according to package directions. Place a large sheet of parchment paper sprayed with cooking spray onto the counter next to the melted caramel.
- Dip Apples In Caramel. Take one apple at a time and dip and spoon caramel starting at the bottom of the apples, spooning 3/4 way up the apple. Remove any excess caramel and carefully place onto parchment paper to set up. Continue dipping with remaining apples.
- Attach Marshmallow “Ears.” Cut bottom 1/4 of the marshmallows and place sticky side onto tops of the apples on both sides of the stick to form the Mickey Ears. I stuck a toothpick into each marshmallow/apple so they were secure when adding the white chocolate. I used a small hammer to tap the toothpick into the marshmallow FYI.
Disney Caramel Apples
- Melt White Chocolate. Once caramel has set up mostly, usually takes a good 15-20 minutes, melt the white chocolate in a double boiler. Boil water in a large saucepan, reduce heat to low and place a heat proof bowl over the hot water in saucepan. Add white melting wafers to bowl and stir until melted and smooth. Get a clean pice of parchment paper ready on the counter, to place dipped apples on. Place sugar and cinnamon into a shallow bowl, stirring to combine. Take the caramel apples and spoon the melted chocolate over entire surface of the apple including the marshmallow ears. Once covered, remove any excess chocolate before transferring to parchment paper.
- Sprinkle With Cinnamon Sugar. While chocolate is still wet, sprinkle top half with cinnamon sugar. Spinning apple to get the entire top half sprinkled.
- Press Into Graham Cracker Crumbs. Quickly place apple into a bowl of graham cracker crumbs. Use a spoon to press crumbs up the bottom half of the apple. Continue to spin until crumbs are staying in place.
Let Chocolate Set Up
- Let Chocolate Set Up. Place dipped apples onto clean sheet of parchment paper to let set up. When serving, remove stick, marshmallow ears and toothpicks. Cut into slices, removing the core portions on each slice.
Once apples have been dipped in caramel, cut bottom 1/4 of marshmallows and place sticky side onto top of apples near stick to make the “ears.” Use a toothpick to press into marshmallows and apple, I used a little hammer to get the toothpick in, so it wasn’t sticking out of marshmallow. I found it easiest to use the toothpicks to prevent the “ears” from falling off when adding the white chocolate.
Now that your “ears” are on, it’s time to get the white chocolate melted and toppings ready.
While the chocolate is melting, I placed the cinnamon sugar and graham cracker crumbs onto a cookie sheet to catch what falls off when sprinkling. Makes clean up a little easier with the baking sheet.
Melting White Chocolate Melts
You have a couple options with the white chocolate melts. You can microwave it, like I do for the churro toffee, but I found it easiest to do a double boiler method, meaning you boil water in a saucepan, reduce the heat and add a heat proof bowl over top. Add the melting wafers to the bowl and the steam from the hot water melts the wafers and keeps the chocolate warm while you’re dipping.
Once your caramel layer has set up mostly, use a spoon to spoon the melted white chocolate over the tops and sides of your caramel apple.
Make sure you cover the ears with chocolate too. Keep working until the entire caramel apple is covered. Remove as much excess chocolate as possible before transferring to the parchment paper to prevent it dripping into your topping bowls. Use spoon to remove chocolate that drips from bottom of apple.
Sprinkle cinnamon sugar onto the top half of the caramel apple. It does not have to be perfect, do the best you can. Remove any chocolate drippings from the bowl before moving on to the next apple.
Set the apple into the bowl of graham cracker crumbs and spoon/gently press crumbs up the bottom half of the apple.
What If My Toppings Are Sliding Down My Apple?
This means you had too much white chocolate still on your apple when you went to add toppings. For best results, cover the apple in white chocolate, but make sure you gently shake and remove as much chocolate as possible before adding toppings.
Let apples set up then place onto a serving plate or cake stand. I found my cute Mickey Mouse Cake Stand at the Disney Store a few months ago.
How To Serve
When you are ready to eat your caramel apple, remove the stick, marshmallow ears and toothpicks. Cut apples in half. Cut each half in half and even one more time in half for smaller slices. With knife, remove the core area on each apple slice and place apple slices onto a serving plate. Enjoy within about 30 minutes before apples start to turn brown.
How To Store Leftovers
Once cut, apples should be enjoyed within 30 minutes for best results.

Notes
- If you have too much chocolate dripping from your apple, the crumbs and cinnamon sugar will start to fall down the apple. Try to remove as much excess chocolate as possible before sprinkling with toppings.
So just a mention, I used to work at the confectionery in Disney World. You use a bit of white chocolate to stick on the ears, wait for it to harden fully. Dip the apple in white chocolate completely, wait until it’s not fully dry but still tacky and add the cinnamon sugar to the entire apple wait for it to completely harden. Get a small bowl where if you dip the apple in the white chocolate it will cover half way, wiggle off the access, scrape the bottom LIGHTLY then tap the apple in the graham crackers 🙂
