S’mores Rice Krispie Treats Recipe

This S’mores Rice Krispie Treats Recipe is topped with graham crackers, chocolate and marshmallows! It was inspired by my last trip to Disneyland when I got a gorgeous new krispie treat at the bakeries around the Parks! Love making Disney magic at home!

During my last visit to Disneyland, I was so excited to see a new rice krispie treat in the bakery cases! Naturally, my first thought was, I have got to re-create this treat at home! I have the best rice krispie treat recipe that I added s’mores toppings to. This is a show stopping dessert you are going to love!

What You’ll Need

Here are the ingredients you’ll need to make your own S’mores Rice Krispie Treats. See bottom of post’s recipe card for full details and instructions.

  • butter-I use salted butter for most of my recipes. Unsalted is just fine too.
  • mini marshmallows– Check the baking isle of your grocery store for marshmallows.
  • vanilla- For best tasting results use pure vanilla extract.
  • salt- I use kosher salt which is a coarse salt.
  • rice krispie treats cereal– Use Kelloggs cereal, not the off brand.
  • sheets of graham crackers– I use the honey graham crackers for the recipe.
  • chopped chocolate– If you have a Trader Joe’s nearby, look for the milk chocolate block. I use it to chop into chunks for melting my chocolate and adding chunks to top of treats.

How To Make S’mores Rice Krispie Treats Recipe

Melt Butter. Place butter in a large dutch oven or pot over medium low heat. Stir to melt then add 8 cups of mini marshmallows to pot. 

Add Marshmallows. Stir marshmallows and butter together until melted and smooth.

Vanilla and Salt. Add vanilla and add salt. Stir to combine. Remove from heat and swiftly stir in cereal. 

Can I Melt The Marshmallows In The Microwave Instead?

While, I prefer having more control of the marshmallows melting over the stovetop, you can melt the marshmallows in the microwave. You’ll need a very large heat proof bowl. Add the butter and marshmallows and heat in 45 second intervals watching very closely. They’ll puff up pretty high over the bowl when cooking. Carefully remove from the microwave and mix until melted.

Add Mini Marshmallows. Add remaining 3 cups mini marshmallows to the warm mixture. Stir gently and not too much. The marshmallows will melt just slightly. 

Transfer To Pan. Transfer mixture to buttered pan. Add a little softened butter to your hands and gently press treats into pan without pressing too flat.

Cut Into Squares. Use a plastic knife and gently cut into 9 rectangles while still warm. Let firm up in the refrigerator for 15 minutes.

Add Graham Crackers. Place individual rectangle cut Krispie Treats onto some parchment paper on a counter top. Get graham cracker sheets ready, I sized them to my Krispie Treats, trimming with a sharp knife if needed.

Melt Chocolate. Melt chopped chocolate or chips in a heat proof bowl for 60 second intervals in the microwave, stirring until melted and smooth. Working quickly, in batches of 3 treats at a time, spread an even layer of chocolate over the treats. Gently press graham cracker sheets over melted chocolate. I spooned some of the melted chocolate into the corner of a ziplock baggie, snipped the end and used as a “pen” to drizzle chocolate over the graham crackers.

Add Marshmallows and Chocolate. Once drizzled over graham crackers, place marshmallows on top along with some chocolate chunk pieces.

Drizzle Chocolate Over Top. Drizzle more melted chocolate over top of the marshmallows and chocolate chunks.

Recipe Tips For Success

  • Use good quality ingredients. Pure vanilla, Kelloggs Cereal and good quality mini marshmallows along with the chocolate. It will all make a difference on how they taste.
  • As soon as marshmallows are melted add your cereal and stir quickly to avoid mixture setting up too quickly. When marshmallows are combined with cereal transfer to dish immediately.
  • To avoid sticking, spray your hands or rubber spatula with cooking spray when pressing into dish.
  • Use a plastic knife to cut rice krispie treats into rectangles or squares. Cut while the treats are still warm.
  • When melting the chocolate, plan on working in small batches, so the chocolate doesn’t start setting up. I work on about 3 treats at a time for reference.

  • ziplock for drizzling melted chocolate
  • 9 x 13 inch baking dish
  • plastic knife for cutting treats into rectangles

Ingredients

  • 10 tablespoons salted butter 1 stick plus 2 tablespoons
  • 11 cups mini marshmallows divided
  • 1 tablespoon pure vanilla extract
  • 1/2 teaspoon kosher salt
  • 9 cups Kelloggs Rice Krispies Cereal
  • 9 sheets graham crackers
  • 1 cup chopped milk chocolate from block or chocolate chips
  • 2 cups mini marshmallows for topping
  • 1 cup chopped chocolate chunks

Instructions
