Cookie bar recipes are some of my favorite recipes to create! I found the most delicious cherry chips that made the BEST cookie bars ever. Soft yet buttery crisp with the “cherries and cream” flavors going on. Wrap these bars up in a cute bakery box, wrap with twine and surprise your friends with a fun festive treat. Enjoy !

I found these Cherry Flavored Baking Morsels at one of my local grocery stores. I know they can be tricky to find. Keep your eyes open for them, they make such a festive cookie! If you can’t find them, you can always substitute your favorite chocolate chip in it’s place.

Start by creaming your butter and sugars in your favorite large mixing bowl or stand mixer.

How To Make Cookie Bars

  1. Preheat oven to 350 degrees F. and line a 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, cream your butter and sugars. Add egg and vanilla mixing until well combined. Slowly add flour, baking soda, salt, white and cherry chips. Mix until just combined. Transfer dough to prepared baking pan, pressing evenly. Bake for 25-30 minutes, until golden brown and baked through. Let cool completely then cut into squares to serve.

What Can I Substitute Cherry Chips With?

If you can’t find the cherry chips, no worries. You can use dried cherries in the snack isle of your grocery store or any other favorite chocolate chip flavor.  Lots of options!

Give a nice mix. Almost ready to bake!

Transfer your dough to a 8×8 inch baking pan lined with parchment paper.

Press evenly and bake for 25-35 minutes.

Once cooled completely, cut into squares and try not to eat the entire batch yourself 🙂

Tips For Making The Best Cookie Bars

  1. Don’t alter the recipe, use all ingredients as listed.
  2. For a more firm cookie, refrigerate your cookie dough for 24 hours before baking.
  3. Always use butter, not margarine.  ALWAYS.  I prefer salted butter for my chocolate chip cookies.  Try it!
  4. Don’t skip creaming your butter and sugars for a good 2 minutes.  Helps create a fluffy, chewy cookie bar.
  5. Try sprinkling dough with just a touch of salt for a perfect sweet and salty combination.
  6. Don’t overtake your cookie bars.  Bars will continue to cook on hot cookie sheet when removed from oven.
  7. Let cookies cool completely before cutting into squares and storing in containers. This will keep their crispness.
  8. Store leftover cookies in an airtight container for 3 days room temperature.

Ingredients

  • 1 stick unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cherry flavored chips
  • 1 cup white chocolate chips

Instructions

Notes

If you can't find cherry chips, you can substitute any of your favorite chocolate chip flavors. Butterscotch, mint, toffee chips, anything works great!

I couldn’t find the cherry chips, but Target is carrying Christmas colored chocolate chips, so I just separated the red ones and used these instead!
