I am thrilled with these devilish little cupcakes we whipped up over the weekend. I pressed a few Jr Mints into the centers of my favorite fudgy cupcake batter and talk about heaven sent! Gooey minty centers is what you’ll find hiding and they go perfect for those midnight snack cravings with a tall glass of milk! Enjoy!!

Chocolate Fudge Jr Mint Centered Cupcakes
Ingredients
- 1 box Pillsbury Devils Food Cake Mix
- 4 eggs
- 1/2 cup vegetable oil
- 1/2 cup water
- 1 small box instant chocolate pudding mix
- 1/2 cup sour cream
- 1 cup chocolate chips
- 3 4 oz boxes Jr Mints look for them on sale, I found them for $1.00
- favorite vanilla or cream cheese frosting
Instructions
- Preheat the oven to 350 degrees F. In a stand or electric mixer, add the cake mix, eggs, oil, water, pudding mix, sour cream, and chocolate chips. Mix on medium for 2 minutes or until well combined and somewhat thick. Scoop into 24 paper-lined muffin cups. Press 3 JR mints into the center of each cupcake center. Bake for 22-25 minutes or until toothpick comes mostly clean from the center. Let cool completely and frost with your favorite vanilla or cream cheese frosting.

I love these cupcakes! Jr Mints used to be my favorite candy to get at the movie theater when I was a kid!

Oh my mercy, these are incredible. I made them a few weeks ago for a lesson I taught to the 16-18 year old girls at church. I tied them up in clear cellophane and tied them up cute. The next week the girls were raving that it was the best cupcake they’d ever had. Yummy! My three year had a chocolate and frosting face and kept saying, “more cupcake please”. Thanks for being brilliant and coming up with this and many more yummies. I can smell my crockpot tacos right now…can dinner come any sooner? I live in AZ but was in CA last week and sought out a Ralphs to buy the tortilla bread…I can’t wait. Thanks again!

i do have one question though, i can follow recipes in the mixing/beating/whisking past, but when it comes to the oven i am horrible.. i never know how long to keep it even when it tells me like 15 minutes. How do you make sure exactly how much time you keep your cupcakes and cookies in the oven so that the inside is all gooey??
I made these tonight and added some peppermint extract in addition to the Jr.mints (since i had it) and it really kicked up the mint flavor. YUMMY!

those cupcakes look very tempting and yummy! I love the addition of junior mints.
I will eat Jr. Mint after Jr. Mint until I find one that is gooey in the middle (and then, of course, I will repeat the process until I find another one). That frosting looks so smooth and dreamy, the perfect complement to a perfect Jr. Mint.
Oh.my.goodness. I LOVE mint! I miss Christmas mainly for all the peppermint confections. So this is right up my alley. Thank you for sharing this fantastic idea.

Mmmm! These look great, but to be honesty, I’m not a big fan of mint and chocolate…so, I’d put Milk Duds in the middle. 🙂 Yum!
