So, I’ve officially hung up my dental hygiene instruments for a while. I’ve been working part time at my office for the last 7 years and have really enjoyed it. My hubby and I decided this was a good time to take a little break while the boys are young and crazy, but I’m hoping to do some temp work for my office from time to time. So, as a goodbye for now, I brought a big plate of these wicked brownies for all to enjoy.
This is such a fun recipe, it is similar to one I created f0r the Pillsbury Bake-off a couple years ago, and even though it wasn’t chosen for the cook-off, they are a hit wherever I take them. I mean, what’s not to love about brownies lathered in caramel sauce and rice crispy treats drizzled with silky chocolate!!?? Take a big plate of these to your next party and watch your family and friends drool!
Crispy Caramel Brownie Treats
Ingredients
- 1 brownie mix of choice 9x13 size
- ¾ cup caramel ice cream topping
- 3 cups mini marshmallows
- 2 tablespoons butter
- 3 ½ cups rice crispy cereal
- 1 cup semi sweet chocolate chips
- 2 tablespoons coconut oil you can also use heavy cream
Instructions
- Preheat oven to 350 degrees F. Prepare brownie mix according to package directions. As soon as they are done baking, remove from oven and drizzle with caramel ice cream topping.
- In a large microwave safe bowl, melt marshmallows and butter until puffed up. Stir in cereal until well combined. Quickly place over brownies and gently spread evenly over top. Place chocolate chips into a medium microwave safe bowl and microwave in 30 second intervals until melted and smooth. Stir in coconut oil or heavy cream until shiny and smooth. Pour and drizzle over top of brownies. Let cool then cut into squares.

I am literally sitting here praying that I have everything that I need to make those brownies. I have such a serious chocolate craving right now. Your pics are always so good! What was wrong with those Pillsbury people — they just wanted to eat all those instead of saving them for judging!!
As usual things look amazing! Congrats on reliquishing the prophy wheel! I think it is fantastic and look forward to that very same day.

Those look so yummy-all kinds of good flavors and textures going on. Congrats on all the publicity! You deserve every good thing.
Jenny,
When you make these scrumptious desserts, how do you keep yourself from eating the whole pan? or, are you able to eat what you want and still look great?
emily
Those look divine. I love playing around with brownies and with rice crispy treats, never thought of putting the two together though.
YUM!
Hi Lisa,
Funny, you never know what Pillsbury is looking for from year to year!
Hi Jamie!
Me too! Enjoy the Peanut Butter Cheesecake Bars!
Hi Emiline,
Yes, our dental office always had treats around!
Thanks Jenna,
Luckily I only keep a few brownies around, so my boys just get a little square!
Thanks Katherine!
Those brownies look positively sinful! I know my crew would just devour these!
I drool everytime I see your brownies Jenny. I bet your boys show off that their mum is the queen of making brownies.
If these were in my fridge – I would have to hide some for me before they all got devoured!
These would be waayy too dangerous for me to keep around the house. I would eat them all. 🙂
Congrats on being mentioned in the blogs. The peanut butter sandwich looks really good.
Do dentists dare to eat a treat such as this?
I think I gained 5 lbs just looking at this dessert. Looks amazing…thank you for posting.
I already bookmarked your Peanut Butter Cheesecake Bars to make my husband for his birthday in September…sounds right up his alley!
Wow, Pillsbury had to be crazy not to pick these as a finalist! Enjoy your extra time at home.
