  31. I am in the mood for something lemony right this minute… so I think dense, tart lemon bars with a delicate, crumbly crust and a sprinkling of powdered sugar.

  32. If I had the time today, I’d make my grandmother’s chocolate cake. Known in my family as Grammy’s Chocolate Cake, it’s an amazingly dark, dense cake. My grammy would sweeten it by using actual fudge as the icing. My mom made a delicious homemade buttercream for it. I have an easier buttercream knockoff, but as long as I’m imagining that I have the time to bake the cake, I might as well take the imagined time to make the real buttercream, too! Delicious. There’s no cake out there like it.
    (Grammy passed away in April and I’ve been thinking of her cake ever since.)

  59. If I had time to bake right now, I would make homemade strawberry shortcake. I’ve wanted to try making crumbly, shortcake biscuits for years. I’m sure the combination of the homemade biscuits, in-season strawberries,and whipped cream would be divine!

    I’d bake as many of my favorite cookie recipes that I was able to bake. They would include: chocolate chip, peanut butter, sugar cookies with cookie dough icing, world peace cookies, pumpkin bars, toffee-pretzel peanut butter cookes, millionaire shortbread, brownsugar shortbread, brookies, snickerdoodles and gingersnaps(a true baker’s dozen). I’d serve ice cream with the thirteen varieties of cookies and invite as many needy children as possible.
    In beautiful Southwest Florida where I’ve lived for over 25 years, there are many needy hungry children especially in the Summertime when they don’t have free school breakfast and lunch programs. Having taught 2nd grade and loving children of all ages, this would simply be a labor of love!

The cookies would be brown butter chocolate chip (or if I was feeling frisky, double chocolate chip!) This dessert screams summertime and is fun to prepare with family!

    It’s a recipe called Doughnut Muffins I found online a year ago by Downtown Bakery Creamery. Love them because they’re the ease of a muffin but taste so much like a donut without all that oil donuts are fried in.
