I am sharing one of my recipes in the book today called Inside Out Chicken Pot Pies. It is a breeze to put together and the whole family loves it. I’ll have a video on Goodbite.com soon demonstrating this recipe!
Inside Out Chicken Pot Pies
Equipment
- Oven
Ingredients
- 1 sheet thawed puff pastry
- 1 can cream of chicken soup
- 1 cup milk I used skim
- 1 can chunk chicken drained
- 1 can mixed vegetables drained
- 1/4 tsp cajun seasoning I used Emerils
- 1 pinch salt
- 1 pinch pepper
- 1 pinch garlic salt
- rosemary sprigs for garnish
Instructions
- Preheat oven to 400 degrees F. Carefully unfold pastry onto a lightly floured counter. Cut into 9 equal size squares and place onto an ungreased cookie sheet.
- Bake for about 15 minutes or until golden brown. Set aside.
- While pastry is baking, whisk together the soup and milk in a large bowl then transfer to a large skillet over medium heat.
- Add chicken, vegetables and seasonings. Break up chicken pieces with back of fork. Cook and stir until heated through, about 5 minutes.
- Place puff pastry squares on serving plates and spoon chicken gravy over top. Garnish with sprigs of rosemary if desired.

My family favorite dish to serve is what we call “Pizzaghetti”. It’s basically baked spaghetti layered with cheeses and pepperonis. YUM!

Nachos! Its takes 10 minutes to cook the meat, and I use a cheese sauce that just needs to be microwaved 🙂
When I’m pinched for time I love making chicken salad served on thin sliced bread. I use leftover chicken from a previous night or get one precooked from the store. So easy and so delicious!

A quick and easy meal is a chicken casserole I make in a 9×13 pan.Spray pan.1st layer cubed cut up chicken, 2nd shredded mozzerella cheese, 3rd, can of cream of chicken and lastly one box of cooked stovetop stuffing.
Tacos are quick and easy–but I have to try that recipe! The inside-out potpie looks delicious!
My favorite quick and easy recipe is a low carb pasta with a bit of butter, Parmesan and chopped green onion, tomato, avocado, olives etc yummy

My favorite quick and easy meal to make is homemade mac’n cheese!! 🙂
My favorite quick meal is Chicken Breast with Lime and Butter sauce. Just Fry the chicken breast in a little oil until juices are clear. Then remove and melt real butter and add some lime juice to the pan to melt. Oh and add a little dill weed. Pour on the chicken and you look like a gourmet cook!
Gorgonzola Mac and Cheese!

my fave quick and simple recipe is a chicken casserole that uses potato chips chicken and cream of whatever soup…..lol. My kids love it and you can play around with different flavors of potato chips too…YUM! That being said,I really can use some new quick recipes so thank you so much for a shot to win this awesome sounding cookbook!!
