Inside Out Chicken Pot Pies

Inside Out Chicken Pot Pies

Equipment

Ingredients

  • 1 sheet thawed puff pastry
  • 1 can cream of chicken soup
  • 1 cup milk I used skim
  • 1 can chunk chicken drained
  • 1 can mixed vegetables drained
  • 1/4 tsp cajun seasoning I used Emerils
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch garlic salt
  • rosemary sprigs for garnish

Instructions

  • Preheat oven to 400 degrees F. Carefully unfold pastry onto a lightly floured counter. Cut into 9 equal size squares and place onto an ungreased cookie sheet.
  • Bake for about 15 minutes or until golden brown. Set aside.
  • While pastry is baking, whisk together the soup and milk in a large bowl then transfer to a large skillet over medium heat.Ā 
  • Add chicken, vegetables and seasonings. Break up chicken pieces with back of fork. Cook and stir until heated through, about 5 minutes.
  • Place puff pastry squares on serving plates and spoon chicken gravy over top. Garnish with sprigs of rosemary if desired.

    I think chicken pesto pasta is the easiest thing to make! I whip it up in less than a few minutes. But I do make a batch of stuff during the weekend so that during the week if I don’t have time to cook, I just throw things in the pan.

    One of our family favorites is Stroganoff – it’s not fancy, but it’s fabulous. 1 can French Onion Soup, 2 cans Cream of Mushroom Soup, 1 – 2 lbs stew meat. Throw it in the crockpot for 5-6 hours and DEVOUR it on rice or noodles. YUMMERS!

    Mmm, looks delicious. My favorite quick and easy meal is spaghetti. I make large batches of sauce and meatballs for the freezer, so on a night where I need a quick meal, all I have to do is make the pasta, heat up the sauce/meatballs, and maybe grate some fresh cheese. Yum.

    Grilled Chicken Salads.. I always grill a few extra chicken breast and keep them in the freezer. In a pinch I can thaw a few, toss together a salad, toast up some Garlic bread and we have a great meal, quick and easy!
