Peanut Butter Cookie Bars

These peanut butter cookie bars packed with mini Oreo Cookies and chocolate chips are so much fun and will certainly satisfy any sweet tooth. They are great to bring to a party, package up for friends or even for serving as an after school treat. Be sure to serve with a tall glass of milk and prepare your taste buds for a big party 🙂

What You’ll Need

  • butter– For most of my recipes I use salted butter. Unsalted works too.
  • granulated sugar– This fine white sugar adds sweetness to the cookie bars.
  • light brown sugar– Light brown sugar also adds sweetness and richness to the bars.
  • creamy peanut butter– Use your favorite brand of creamy peanut butter.
  • large egg– For consistency, I use large eggs in my cooking and baking.
  • pure vanilla extract– Use pure vanilla extract for best tasting results.
  • all-purpose flour– Flour is the main dry ingredient in the cookies.
  • baking soda– Baking soda helps the cookies rise during baking.
  • kosher salt– Kosher salt is a course salt commonly used in cooking and baking. I prefer it over table salt.
  • chocolate chips- Milk or semi sweet is generally what I use. White chips and butterscotch would be good substitutions too.
  • mini oreos– Mini Oreos are usually sold in a bag in the cookie isle. You can crush your own regular size Oreo cookies if needed too.

How To Make Peanut Butter Cookie Bars

  1. Preheat oven to 350 degrees F. and line an 8×8 inch baking dish with foil that’s sprayed with cooking spray.
  2. Place butter and sugars into a large bowl, cream until well combined. Add peanut butter mixing to combine. Stir in egg and vanilla mixing well. Add flour, baking soda and salt, mixing until dough forms. Stir in chips and mini Oreo cookies stirring until just combined. Transfer dough to prepared baking dish, press dough evenly into pan.
  3. Bake for 30-35 minutes or until golden brown and cooked through. Remove and let cool for 45 minutes before cutting into squares. Serve with milk and enjoy!

Once your butter and sugars are well combined, stir in your peanut butter.

Once combined, add your dry ingredients to the mixing bowl.

Time to bake. I line an 8×8 inch baking dish with foil that’s been sprayed with cooking spray. This makes removing and cutting into squares much easier.

Perfectly browned and baked. Let cool for a good 45 minutes then cut into squares and serve!

Ingredients

  • 1 stick/8 tablespoons unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1 cup all purpose Gold Medal Flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup chocolate chips
  • 2 cups mini Oreos

    Your gorgeous photos helped me to envision the Guittard chips. First, I’d open the package and test a handful. Then I’d pour the required amount atop the cookie dough and test a few of those. Then I’d gently, carefully stir them into the cookie dough and test a few tablespoonfuls of the cookie dough. Then, moving on to the mini Oreos ~

    Does this recipe use hazelnut or vanilla extract? The ingredient line up picture includes imitation hazelnut extract, but you use vanilla extract in the action shot. Also, the ingredient list includes vanilla extract. It seems like it should be vanilla, but I want to make sure. Thanks!
